Chicken Pasta Cheese Casserole

This is a good solid recipe for the family
- 4 skinless chicken breast halves
- 1 tbs herbes de provence
- salt and black pepper
- 1 tbs evoo
- 1 package ziti or penne pasta
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 3 tbs unsalted butter
- 3 tbs flour
- 2 tbs tomato paste
- 3 c 2% milk
- 8 oz cheddar shredded, 2 c
- salt and black pepper
- 2 c bread crumbs
- 2 oz parmesan cheese, shredded
- 3 tbs unsalted butter, melted

Found this recipe in the Virginia-Pilot but have tried similar for parties
- 1 tbs evoo
- 1 minced garlic clove
- 1 thinly sliced vidalia onion
- 1/2 fennel bulb,outer layer removed and halved lengthwise, thinly sliced crosswise
- 3 medium-sized red potatoes, cut into 1/2-inch pieces
- 2 1/2 broth
- 1 tbs old bay seasoning
- 1 tbs paprika
- 1 tsp cayenne pepper
- 2 andouille sausage links, sliced into rounds
- 1 dozen clams cleaned
- 12 medium shrimp, deveined and peeled
- 1 tbs unsalted butter
- 3 tbs coarsely chopped italian parsley
- 2 tbs lemon juice
- sea salt

Deviled Eggs with Crab and Capers

- 6 large eggs
- 1/3 cup extra virgin olive oil
- 1 tsp fresh lemon juice
- Cayenne pepper
- 1 tbs finely chopped flat-leaf parsley
- 1 tbs minced scallion
- 1 tbs capers, rinsed
- 1/2 lb lump crabmeat (about 1 cup)
- Salt and pepper
- 1 tbs sherry vinegar
- 1/2 tsp Dijon mustard
- 5 cups baby greens (5 ozs.)
Tofu Szechuan-Style

This is a delicious quick recipe for using tofu
- 1/2 cup chicken broth, divided
- 1/4 cup reduced-sodium soy sauce
- 1 tablespoon tomato paste
- 2 teaspoons balsamic vinegar
- 2 teaspoons Stevia (2 packets)
- 1/4-1/2 teaspoon crushed red pepper, or to taste
- 1 teaspoon plus 2 tablespoons cornstarch, divided
- 1 14-ounce package extra-firm tofu, drained
- 2 tablespoons canola oil, divided
- 1 can green beans, french-style (fresh works great)
- 4 cloves garlic, minced
- 2 teaspoons minced fresh ginger
Corn with Mushrooms and Lemon

- 10 ears white corn, shucked (fresh is best, but can use white corn canned)
- 2 tbs evoo
- 2 medium shallots, minced

- 1 tbs lemon juice

- 2 1/2 cups all purpose flour
- 2 tbs chopped fresh rosemary
- 3/4 tsp salt

Tuna Burgers w/Wasabi Slaw

This recipe was published in the Virginian-Pilot and adapted from Jennifer Chandler of Simply Grilling
- Burgers:
- 1 lb of fresh cut tuna, minced (not pureed)
- 2 tbs dijon mustard
- 1 garlic minced
- 1 tbs shallots, finely chopped
- 1 tbs ginger (paste is okay)
- 1 tsp finely grated lemon zest
- hamburger buns
- Slaw:
- 2 tbs wasabi powder or paste
- 1 1/2 tbs water, if you use powder
- 1/2 cup mayo
- 1 tsp fresh ginger, grated (could try paste)
- 1 garlic minced
- 2 cups cole slaw mix (from bag okay)
- salt and pepper
Marshmallow Frosting

- 1 c sugar
- 3 tbs water
- 2 egg whites, room temp
- pinch cream tartar
- salt
Lisa's Tex-Mex Chili

I use the Carroll Shelby Chili kit since it holds the spices that I would use anyway and it is convenient
- Optional toppings:
- 1 box Carroll Shelby's Chili Kit
- 1 whole bell pepper- diced
- 1/2 sweet onion-diced
- 1 15 oz diced tomatoes
- 1 8 oz tomato sauce
- 2 15 oz cans dark kidney beans
- 2 15 oz cans light kidney beans
- water to cover
- 2 lbs stew beef cut into small bite size pieces (can also substitute turkey)
- Shredded cheddar cheese to sprinkle on top after serving.
- Dollop Sour cream for each serving
- Crushed tortilla chips
