Shortbread Cookies

  • 3 1/2 c flour
  • 1/4 tsp salt
  • 2 tsp ground cardamom
  • 1 1/2 c unsalted butter, softened
  • 1 c sugar
  • 1 tsp vanilla extract
  • Sanding sugar, for sprinkling

Step 1

Whisk flour, salt & cardamom in medium bowl. Put butter and sugar into bowl of an electric mixer with a paddle attachment. Mix on medium high speed until pale and fluffy. Mix in vanilla. Reduce to low, and gradually mix in flour mixture. Press the dough into a 10x15 inch rimmed baking sheet. Press parchment paper onto surface, smooth top. Remove parchment; wrap sheet in plastic. Refrigerate 30 mins.
Preheat oven to 350 degrees. Cut out cookies and arrange on lined, with parchment paper, baking sheet. Refrigerate 15 mins. Sprinkly with sanding. Bake until golden, 18 to 20 mins. Let cool on sheets.
