Rum Raisin Bars

In Virginian-Pilot, Patricia Helding of NY's Fat Witch Bakery
- 1/2 cup light rum
- 1 3/4 c raisins (mix of dark and golden)
- 1/2 c (1 stick) unsalted butter, room temp, extra for coating pan
- 1 1/2 c packed lt brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 c all purpose flour
- 1 tsp salt
Scallops w/Yogurt and Fennel

This recipe comes from Food & Wine's April 2011 issue
- 2 tbs evoo
- 2 fennel bulbs- cut into 8 wedges through core
- salt and fresh pepper
- 1 large shallot, minced
- 1 garlic clove, minced
- 1 thyme sprig
- pinch saffron threads
- 1/2 c vegetable stock (may try dry white wine or chix stock instead)
- 1 tbs canola oil
- 16 medium-sized scallops
- 1/4 c plain yogurt, season w/salt
Blueberry Pie

- 3 1/2 c blueberries, washed and dried
- 3/4 c sugar
- zest of 1 lemon
- 1 tbs lemon juice
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- 1 small green apple, peeled and grated
- 1 1/2 tbs quick-cooking tapioca
- crust of your choice for 2 crust 9 inch pie
Berry Bread Pudding

- Unsalted butter for greasing dish
- 1/4 c turbinado sugar
- 2 c heavy cream
- 2 c whole milk
- 2/3 c plus 1/4 sugar
- 1 tsp salt
- 4 large eggs
- 4 large egg yolks
- 1 1/2 tsp vanilla extract
- 2 c blueberries and raspberries, plus more for garnish
- 1 1lb loaf brioche, diced
- whipped cream, for garnish
Apricot-glazed almond cake w/honey mascarpone cream

- Cake:
- 16 tbs (2 sticks) unsalted butter, cut into small dice, room temp, plus more for pan
- 1 c flour (divided), more for pan
- 1 1/3 c sugar
- 8 oz almond paste (no marzipan)
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 1 1/2 tsp vanilla extract
- 1 tsp almond extract
- 6 eggs, room temp
- Glaze:
- 1 1/4 c apricot preserves
- 2 tbs rum or water
- Cream:
- 1/2 c chilled heavy whipping cream
- 1 c mascarpone
- 2 tbs honey, (orange blossom)

Potato & Cabbage Soup w/ Sausage

This recipe is a hearty soup that's great on a chilly day with a beer and sourdough bread
- 4 tbs evoo
- 1 large vidalia onion that is cut into small chunks
- 6 garlic cloves, minced
- 1 large head of cabbage or l bag of shredded cabbage
- 6 yukon potatoes, peeled and cut into small chunks
- 3 large carrots, peeled and cut into small chunks
- 1 1/2 lbs of smoked sausage cut into small slices
- 6 cups chicken broth
- 1 bottle of beer
- 1 tsp caraway seeds, slightly crushed
- 4 tbs fresh parsley chopped
- sea salt and coarse ground pepper to taste
Roasted Cauliflower & Chickpeas

This is a great side dish recipe and easy to make
- 1 can (14.5 to 15.5 oz) chickpeas
- 1 head cauliflower, chopped into bite-sized pieces
- 3 tbs + 1/4 c evoo
- sea salt
- coarse black pepper
- 1 tbs dijon mustard
- 1 tbs grey poupon
- 1 tbs white wine vinegar
- 1/4 cup cilantro, chopped
White Chicken Chili

- 1 tbs veg oil
- 1 vidalia onion, chopped
- 3 cloves garlic minced
- 1 - 2 jalapenos, finely chopped
- 1 4oz can green chili peppers
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp cayenne pepper
- 2 (14.5 oz cans chicken broth
- 2 lbs chopped chicken breast
- 4 (15 oz cans) navy, northern, white beans
- 1 cup shredded monterey jack cheese or cheddar.

- 1 can 20 oz pineapple chunks in juice,drained well
