Chicken w/Leeks and Asparagus

Threw this together and is definitely a keeper this goes great with mashed potatoes or couscous
- 1 lb. chicken breasts, cut into chunks
- 1 bunch of leeks, sliced and washed
- 1 bunch asparagus, washed and cut into thirds after breaking off ends.
- 3/4 c sliced dried tomatoes in oil
- evoo
- salt
- pepper
- white wine vinegar
- 5 artichokes marinating in oil
- artichoke marinade

- 1 tsp instant coffee powder or granules
- 2 tsp vanilla extract
- 1/2 cup flour
- 1/2 cup unsweetened cocoa
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup sugar
- 1/4 cup vegetable oil spread
- 3 large egg whites

- 1 c ap flour
- 1 1/4 tsp cinnamon
- 1/2 tsp baking soda

- 1 1/2 stick butter, room temp

- 2 lb eggplant,peeled
- 1/4 c plain greek yogurt
- 1/2 tsp smoked paprika

- 1 14 oz can sweetened condensed milk
- 4 egg yolks, beaten
- 1/2 cup Key lime juice (or lime juice)

- 1/2 cup plus 2 tbs evoo
- 4 garlic cloves, minced
- sea salt and ground pepper
- 1 lb of broken noodles or Orecchiette
- 1 cup packed flat-leaf parsley, divided, plus 2 tbs finely chopped stems
- 2 tbs finely grated lemon zest (from 3 large lemons)
- 4 oz walnuts, toasted and roughly chopped (1 1/4 cup)

- 2 lbs strawberries, hulled, plus 6 strawberries, hulled and thinly sliced
- 1/2 c plus 2 tbs sugar, Stevia is a good low-fat replacement
- 5 c milk, 2%
- 1 c basmati rice or medium-grain rice
- 1/2 vanilla bean, split and seeds scraped
- 6 small meringue cookies, coarsely crushed
Cranberries with Cognac

I first saw this recipe in Martha Stewart Living, published around 1995
- 2 cups fresh cranberries
- 3 tbs Cognac
- 1 cup packed lt brown sugar
- 1/4 cup fresh orange juice
- 3-5 whole allspice berries (I use ground and works fine- 1 tsp)
- 2-3 whole cloves
- 4-6 whole black peppercorns
- 1/2 tsp crushed red pepper flakes
- Cinnamon stick (1/2 inch piece)
