Directions Preheat oven to 450°F
- 2 halibut fillets, approximately 3/4 lb
- 1 1/2 tablespoons oil
- 3/4 teaspoon lemon juice

Preheat oven to 250 degrees F Cut off top of bread and set aside
- 1 (20 ounce) loaf round French bread
- 2 (8 ounce) packages cream cheese, softened
- 2 tablespoons grated onion

- 3 cups uncooked penne pasta (about 12 ounces)

- 2 pounds uncooked shrimp (31-40 per pound), peeled and deveined, divided
- 1/2 teaspoon crushed red pepper flakes, divided
- 3 cups homemade marinara sauce
- 3/4 cup fat free half-and-half cream
- 4 cups chopped fresh spinach
Pasta with Roasted Eggplant

Arrange eggplant rounds on triple layer of paper towels on large cookie sheet
- 2 large eggplants cut into 1/2 inch thick rounds
- salt
- 1 med size red onion cut into 1/2 inch thick rounds
- 3/4 cup extra virgin olive oil
- Fresh ground pepper
- 1 cup chopped red onion
- 2 large cloves garlic minced
- 1/4 cup fresh lemon juice
- 1/4 tsp dried red pepper flakes
- 1 1/2 lb penne pasta
- 3 large tomatoes seeded and cut into 1/4 inch wide strips
- 1/2 cup plus 2 TBS toasted pine nuts
- 1/2 cup chopped fresh oregano
- 1/2 cup chopped fresh basil
- 1 1/2 cup freshly grated romano cheese

In a small bowl mix together flour, sugar and mustard powder until evenly blended
- Yields 4-6 servings to serve with ham
- 1 1/2 tsp all purpose flour
- 1/4 cup and 2 TBS white sugar
- 1 1/2 tsp dried mustard powder
- 1/2 c milk
- 1 egg yolk
- 1/4 cup white wine viegar

- 1-1/4 medium zucchini, quartered and cut into large pieces
- 2-3/4 medium potatoes, peeled and cut into large chunks
- 5/8 medium red bell pepper, seeded and chopped
- 5/8 clove garlic, sliced
- 1/3 cup dry bread crumbs
- 2 tablespoons and 2 teaspoons olive oil
- paprika to taste
- salt to taste
- ground black pepper to taste
