Cauliflower Slaw

Combine vegetables in a large bowl
- Dressing :
- 1 head of cauliflower flowerets, sliced thin
- 6 minced green onions
- 1/4 cup finely chopped celery leaves
- 1/2 cup finely chopped celery
- 1 cup sour cream
- 1/2 cup French dressing
- 1 Tablespoon lemon juice
- 1 Tablespoon worcestershire sauce
- 1/4 cup olive oil
- 1 clove peeled and finely chopped garlic
- 2 teaspoons caraway seeds
- cayenne pepper to taste
Chickpea and Cauliflower Curry

Very good over rice and garnished with flaked coconut
- 2 Tablespoons oil
- 2 cloves crushed garlic
- 1 or 2 seeded sliced green chiles
- 1 " piece of grated ginger
- 1 large chopped onion
- 1 teaspoon tumeric
- 1 teaspoon paprika
- 1 teaspoon coriander
- 2 teaspoons cumin
- 1/4 teaspoon cinnamon
- 1 Tablespoon tomato paste
- 4 cups vegetable stock
- 1 Tablespoon lemon juice
- salt and pepper to taste
- 8 ounces small halved potatoes
- florets of 1 small cauliflower
- 8 ounces cooked chickpeas (garbanzos)
- 2 ounces hot golden curry sauce mix
- ( paste in cubes form )
- 3 Tablespoons yogurt
Orange Guacamole

Excellent as a side with grilled tuna steaks
- 1 large orange, peeled,
- cut into segments and chopped
- 1 medium chopped avocado
- 2 Tablespoons minced red onion
- 1 small jalapeno, seeded and minced
- 2 Tablespoons chopped cilantro
- 4 teaspoons lime juice

- 1 pound surimi (fake crabmeat) chunked
- 1/2 cup chopped celery
- 1/3 cup chopped green onions
- 1 ( 7 ounce ) jar pimentos,
- drained and diced
- 3 Tablespoons lemon juice
- 1/4 teasponn garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- mayonnaise to taste, about 1/2 cup
- English muffins
- sliced cheddar cheese
Dr Pepper Jello Salad

This is my variation on the Coca-Cola Jello Salad
- ( or most of a small jar :
- 1 small package unflavored gelatin
- or black-cherry Jello
- 2 Tablespoons sugar
- 1/4 cup cold water
- 1/4 cup lemon juice
- 1 1/2 cups Dr Pepper
- 1 1/2 cups diced cherries
- add cherries " to taste " )
Bleu Cheese Pork Tenderloin Casserole

Preheat oven to 350 degrees
- 6 ounces cooked egg noodles
- 6 one-inch-thick slices of pork tenderloin
- 1 Tablespoon + 2 Tablespoons butter
- 3 Tablespoons flour
- 2 1/2 cups milk
- 3/4 cup crumbled bleu cheese
- 4 ounce can chopped green chiles
Four Vegetable Dill Salad

this is an Atkins recipe, only 60 calories per serving
- garnish :
- 2/3 cup yogurt
- 2 Tablespoons sour cream
- 1 Tablespoon finely chopped onion
- 1 teaspoon chopped fresh dill
- ( or 1/4 teaspoon dried dill )
- 1/4 teaspoon fine sea salt or seasoned salt
- 1/2 cup chopped broccoli flowerets
- 1/2 cup chopped cauliflower flowerets
- 1/4 cup chopped red bell pepper
- 1/2 cup chopped carrot
- 1 cup ( 4 ounces ) shredded mozzarella cheese
Cincinnati Chili

This is also called Empress or Midwestern chili
- 2 cups chopped onion
- 2 Tablespoons minced garlic
- 1 cup chopped red bell pepper
- 1/4 cup dry sherry
- ( or mirin, a Japanese condiment similar to rice wine )
- 1 pound hamburger
- 2 cups water
- 2 Tablespoons cider vinegar
- 2 teaspoons worcestershire sauce
- 3 Tablespoons chili powder
- 2 cups stewed tomatoes
- ( tomato sauce works in a pinch )
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon cayenne pepper
