Fish Tacos

  • 1 Tablespoon butter
  • 1 cup thinly-sliced onion
  • 1 cup chopped tomato
  • 1 Tablespoon lime juice
  • 1 Tablespoon butter
  • 1/4 teaspoon ground chipotle chili pepper
  • or chili powder
  • 1/4 teaspoon sea salt
  • 2 ( 12 ounces total ) tilapia fillets,
  • halved lengthwise
  • 2 Tablespoons minced cilantro
  • 5 multi-grain flour tortillas
  • lettuce and sour cream for garnish



Step 1

Heat butter at medium-high, and cook onion and tomato until wilted. Remove to a bowl and sprinkle with lime juice. Combine chili powder and salt, and sprinkle over tilapia pieces. Wipe skillet and add butter. When butter is melted and hot, add fish and cook until it flakes easily, about 3 minutes. Add onion mixture, cook for 1 minute. Stir in cilantro, and remove from heat. Serve with warm flour tortillas and garnish with lettuce and sour cream.
