Chicken Thighs in Mushroom Sauce

Ingredients
- 1 1/2 pounds boneless skinless chicken thighs
- 2 Tablespoons olive oil
- 2 Tablespoons butter
- 2 Tablespoons chicken seasoning
- 8 ounces sliced mushrooms
- 1 clove minced garlic
- 3 Tablespoons flour
- 1 cup chicken broth
- 1/3 cup dry white wine ( such as Chardonnay )
- 1/2 cup cream or half-and-half
- 2 Tablespoons chopped parsley

Step 1
Rinse the chicken thighs and pat dry. Sprinkle with seasoning. Heat the olive oil and butter in a large saute pan or skillet at medium. Cook the chicken thighs until brown, then remove from pan and set aside. Saute the mushrooms until tender. Add the garlic and cook for 1 minute. Stir in the flour, sifting it in, and stirring. Add the chicken broth and wine, and mix until combined. Return the chicken thighs to the pan, cover, and cook at low for 20-30 minutes, until thighs are tender. Add the cream or half-and-half and simmer briefly to heat through. Garnish with parsley.
