Zucchini and Yellow Squash Gratin

Ingredients
- 2 Tablespoons butter
- 8 ounces each ( about 2 ) medium-sized yellow squash and zucchini
- 1 shallot, minced
- 2 cloves of garlic, minced
- 1/2 cup heavy cream
- 1 cup Panko bread crumbs, divided
- 1/2 cup Parmesan cheese, divided

Step 1
Preheat oven to 450 degrees. Slice the yellow squash and zucchini crosswise in 1/4 inch sections. Melt the butter in a large pan at medium heat. Saute the squash and zucchini until crisp tender, 4 to 6 minutes. Saute the shallot and garlic, 1 minute. Add the cream, stir until slightly thickened, then remove from heat. Stir in 1/2 cup Panko bread crumbs and 1/4 cup Parmesan cheese. Transfer mixture to an oven-proof 2 quart baking dish. Sprinkle top of mixture with the other 1/2 cup of Panko crumbs and 1/4 cup Parmesna cheese. Bake until the top is golden, about 10 minutes.
