Rigatoni with Beefy Mushroom Gorgonzola Sauce

In a large skillet, heat the vegetable oil over high heat
- 2 tablespoons vegetable oil
- 2 teaspoons butter
- 1 (1 1/4-inch) thick sirloin or rib-eye steak, cut into 1-inch cubes (about 24 ounces)
- 1 1/4 teaspoons salt, divided
- 3/4 teaspoon freshly ground black pepper, divided
- 1 pound cremini mushrooms, stem ends trimmed and sliced
- 1/3 cup minced shallots
- 1 1/2 teaspoons minced garlic
- 1/2 teaspoon minced fresh rosemary leaves
- 1/2 teaspoon minced fresh thyme leaves
- 1/2 cup dry white wine
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 5 to 6 ounces Gorgonzola, crumbled
- 2/3 cup heavy cream
- 1 pound rigatoni, cooked al dente, drained, 1/2 cup cooking liquid reserved
- 1 tablespoon chopped fresh parsley leaves
- 1 tablespoon snipped chives
Auntie Em's Coconut Cupcakes

Mix all in order. Fill cupcake liners 1/2 way
- 2 1/3 C flour
- 1 t baking soda
- 1 t salt
- 1 C vegetable oil
- 1 C buttermilk
- 3 eggs
- 2 1/2 t vanilla extract, divided
- 2 t almond extract
- 1 1/3 C sugar
- 1 3/4 C shredded sweetened coconut, plus extra for decorating the frosted cupcake
Peanut-Curry Chicken and Rice

Prepare rice according to package directions
- 1 cup jasmine, basmati or Texmati rice
- 1 small bunch scallions, coarsely chopped
- 1 inch ginger, peeled and grated
- 2 large garlic cloves, grated or finely chopped and mashed into paste
- 1 small red chili pepper, seeded and chopped
- 1/2 cup cilantro leaves, a couple of handfuls
- 2 rounded tablespoons curry powder, a couple of palmfuls
- 1 1/2 cups chicken stock or broth, plus additional
- 1 tablespoon vegetable oil
- 4 pieces boneless, skinless chicken breast or 1 1/2 pounds chicken tenders, cut into bite-sized pieces
- 1/3 cup chunky peanut butter
- 1 cup Greek-style yogurt
Avocado Egg Rolls with Dipping Sauce

Method: Gently stir together avocado, tomatoes, onion, cilantro, and salt
- 2 large avocados, peeled, pitted, & diced
- 4 tablespoons sun-dried tomatoes packed in oil, chopped
- 2 tablespoon minced red onion
- 1 teaspoon fresh cilantro, chopped
- 1/4 t. salt
- 6 egg roll wraps
- 3-4 teaspoons white vinegar
- 1 teaspoon balsamic vinegar
- 1/2 cup honey
- 1/2 cup chopped cashews
- 2/3 cup fresh cilantro
- 2 garlic cloves
- 2 green onions
- 1 tablespoon granulated sugar
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- 1/4 cup olive oil
Cream of Cheddar Soup

Heat a soup pot over medium heat with the butter
- 2 tablespoons butter
- 1 large yellow onion diced
- 3 garlic cloves, chopped
- 1 teaspoon crushed hot red pepper flakes
- salt and freshly ground black pepper
- 1 tablespoon ground cumin
- 2 tablespoons flour
- 1 quart chicken broth (that's four cups for other non-math whizzes)
- 1 cup heavy cream
- 4 cups good quality aged Cheddar cheese, grated
Chocolate Pudding

Mix sugar, salt, cornstarch, flour, and cocoa in a pot
- 1/2 C sugar
- 2 C evaporated milk
- 1/4 t salt
- 2 egg yolks, beaten
- 2 T cornstarch
- 2 T butter
- 1 T flour
- 1 t vanilla
- 2 T cocoa
Beef Curry (Massaman)

After beef marinates in sugar, brown in dutch oven or heavy stock pot, adding 1 T olive oil
- 2 lb. lean beef cubed
- 1/2 C sugar
- Let beef and sugar sit for at least 2 hours.
- 2 T curry powder
- 1 t ginger
- 1/2 t cinnamon
- 1/4 t ground cloves
- 1/4 t cayenne pepper
- 1 large onion
- 3 cloves garlic, minced
- 1 can light coconut milk
- 1 can diced tomatoes
- 1 can chicken broth
- Cooked basmati rice
- Garnish with cilantro
- Can add potatoes and peanuts.
Pad Thai Noodles

Cook noodles according to package directions
- Sauce:
- 1 package rice stick noodles (14 oz.
- 2 T olive or canola oil
- 2 t minced garlic
- 3 chicken breasts, cubed
- 1/2 medium red onion
- 2 C bean sprouts
- 2 C shredded carrots
- 3 scallions, halved and cut into 2 inch pieces
- 1/2 C Agave Nectar
- 1/2 C rice vinegar
- 6 T Agave ketchup
- 2 T soy sauce
- 2 T chili sauce
- 3 T fresh lime juice
- Garnish:
- 1/4 C fresh chopped cilantro
- 1/4 C chopped roasted peanuts
- fresh lime juice
Uptown Tuna Casserole

Preparation Bring a large pot of water to a boil for noodles
- 1/2 pound extra-wide egg noodles
- Salt
- 1 tablespoon EVOO - Extra Virgin Olive Oil
- 3 tablespoons butter
- 1/4 pound button mushrooms, thinly sliced
- 2 leeks, thinly sliced, washed and dried
- 3 to 4 cloves of garlic, finely chopped
- 3 tablespoons flour
- 1/2 cup dry white wine
- 1 1/2 to 2 cups whole milk or half n half or cream
- 1 rounded tablespoon Dijon mustard
- Black pepper
- 1/2 cup frozen baby peas, optional
- 1/4 cup fresh tarragon leaves, loosely packed, chopped
- 3 cans good quality tuna in olive oil, drained and flaked
- A 6-ounce piece of Gruyere cheese, shredded, about 1 1/2 cups
- 2 tablespoons finely chopped chives or parsley
Cajun Chicken Pasta

Cook rotini (or similar pasta) according to the package directions
- 3/4 lb. Rotini (cooked according to the package).
- 2 Tbl. butter
- 2 skinless boneless chicken breast halves sliced 1/2 inch thick
- 3 glove of garlic (minced)
- 1 bunch green onion chopped
- 2 Tbl. Cajun seasoning
- 1 tsp. ground pepper
- 1 tsp. ground red pepper (cayenne pepper)
- 8 ounce heavy cream
- 1 green bell pepper (cut up)
- 1 red bell pepper (cut up)
- 8 oz. fresh mushrooms quartered
- 1/2 cup parmesan cheese grated
