Oatmeal Carmelitas

Chooey gooey caramel, nuts, and chocolate!
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup quick cooking oats
- 3/4 cup packed brown sugar
- 3/4 cup melted butter
- 1/4 teaspoon salt
- 6 ounces semisweet chocolate chips
- 1/2 cup chopped pecans
- 3/4 cup caramel (homemade is best)
- 3 tablespoons all-purpose flour
Chimichurri Sauce

Put the parsley, cilantro, capers and garlic in a medium mixing bowl and toss to combine
- 1 bunch parsley, leaves finely chopped
- 1 bunch cilantro, leaves finely chopped
- 3 tablespoons capers, finely chopped
- 2 garlic cloves, minced
- 1 1/2 tablespoons red wine vinegar
- 1 1/2 teaspoons salt
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground black pepper
- 1/2 cup olive oil

- 2 cups loosely packed fresh parsley
- 3 scallions, coarsely chopped
- 2 tablespoons capers, drained
- Zest and juice of 1/2 lemon
- 2 anchovy fillets
- 2 cloves garlic, smashed
- 1/2 teaspoon dijon mustard
- 1/3 cup extra-virgin olive oil, plus more for the grill
- Kosher salt
- 1 flank steak (about 1 1/2 pounds)

Homemade Granola

Preheat the oven to 350 degrees F
- 4 cups old-fashioned rolled oats
- 2 cups sweetened shredded coconut, toasted
- 2 cups sliced almonds
- 3/4 cup butter
- 1/4 cup good honey
- 1/4 c brown sugar
- 1 1/2 cups pistachios
- 1 cup small almonds
- 1 cup dried cherries
- 1 cup dried cranberries
- 1 cup roasted, unsalted cashews
Lemon Lime Baby Cakes

Whisk together the flour, baking powder and salt
- For the drizzle:
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, at room temperature
- 1 cup granulated sugar
- 2 eggs
- 1 tablespoon fresh lemon juice
- 2 teaspoons fresh lime juice
- 1 tablespoon fresh lemon zest
- 1 teaspoon fresh lime zest
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup plain yogurt
- 1 1/2 cups confectioners’ sugar

Zupa Toscana Soup

- 1 lb Italian Sausage
- 2 large russet potatoes, sliced in half and than sliced into 1/4 inch thick slices
- 1 large onion, sliced
- 2 cloves garlic, chopped
- 2- 32 ounce cartons chicken broth
- 1 cup heavy whipping cream
- 2 bunches kale, chopped
- freshly grated parmesan cheese
- salt and pepper to taste
- 1 teaspoon crushed red pepper flakes, if desired
Hummus

- large handful of parsley
- 2-3 scallions cut into 1 inch pieces
- 2 cans rinsed, drained, garbanzo beans
- 4 T tahini
- 6 T fresh lemon juice
- 1 t kosher salt
- 1/4 t cumin
- 1/4 t garlic salt
Salsa Verde

This is a super easy and super good recipe that is all done in a food processor
- 1/2 lb. tomatillos, husks removed
- 1/4 white onion
- 1 clove garlic
- 1/4 bunch cilantro
- 1 t salt
- 1 serrano pepper
