Beef Curry (Massaman)

Ingredients
- 2 lb. lean beef cubed
- 1/2 C sugar
- Let beef and sugar sit for at least 2 hours.
- 2 T curry powder
- 1 t ginger
- 1/2 t cinnamon
- 1/4 t ground cloves
- 1/4 t cayenne pepper
- 1 large onion
- 3 cloves garlic, minced
- 1 can light coconut milk
- 1 can diced tomatoes
- 1 can chicken broth
- Cooked basmati rice
- Garnish with cilantro
- Can add potatoes and peanuts.

Preparation
Step 1
After beef marinates in sugar, brown in dutch oven or heavy stock pot, adding 1 T olive oil. Mix together all spices and add to onion and garlic. Lightly saute onion mixture in with the meat. When onions are translucent, add coconut milk, broth, and tomatoes. Serve over basmati rice. Garnish with cilantro. Can add potatoes and peanuts.
