- 1/2 cup lemon juice
- 1/2 cup apple cider vinegar
- 1/3 cup dark molasses
- 1/3 cup Worcestershire sauce
- 2-3 tablespoons brown sugar

Broccoli Rabe and Sausage Pizza on Bread

Preheat broiler and position rack 1 rung from top of oven
- 1 large bundle broccoli rabe, trimmed, washed and dried, coarsely chopped
- 1 large loaf ciabatta bread or 2 small loaves, split horizontally, (Portion in your head for 4 servings of bread pizzas to pick the right size)
- EVOO - Extra Virgin Olive Oil, for drizzling, plus 2 tablespoons
- 1 pound bulk Italian sweet sausage
- 4 cloves garlic, finely chopped or grated
- Black pepper
- 1/2 teaspoon crushed red pepper flakes
- Freshly grated nutmeg, to taste
- 1 cup fresh ricotta cheese
- 1/3 cup whole milk
- 2 tablespoons fresh thyme, chopped
- 2 cups provolone cheese, shredded

- 2 whole bulbs garlic
- 1/3 to 1/2 cup EVOO – Extra Virgin Olive Oil, plus additional for drizzling

- 1 T. red curry paste
- 2 t. roasted chili paste (optional)

- 1 T. fish sauce
- 1 T. brown sugar
- 1/4 C. chunky peanut butter
- 1 T. freshly squeezed lime juice

- INGREDIENTS
- 1 tablespoon extra-virgin olive oil
- 2 medium yellow onions, diced
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper
- 12 ounces beer, preferably lager (1 1/2 cups)
- 3/4 cup ketchup
- 3/4 cup cider vinegar
- 1/2 cup whole-grain mustard
- 2 tablespoons tomato paste (see Ingredient notes)
- 1 canned chipotle pepper in adobo sauce, minced, plus 1 tablespoon adobo sauce
- 1 5-pound bone-in Boston butt (see Ingredient notes)
Sourdough Bread

- Yeast Starter:
- 1/4 C mother starter, cold or at room temperature
- 1 2/3 C unbleached bread flour (12 % gluten)
- 1/2 C plus 2 T filtered water at room temperature
- Combine all in mixing bowl at low speed or by hand for 2 minutes. should feel dough like and tacky or slightly sticky.
- Transfer to lightly floured work surface and knead for about 30 seconds.
- Place in clean, lightly oiled bowl. Cover the bowl loosely and leave at room temp for 6-8 ours until starter increases to about 1 1/2 times original size.
- If using now, leave out for 1 more hour, if not, put into refrigerator for up to 3 days.
- Dough:
- All the starter (15 oz)
- 1 3/4 C lukewarm water
- 4 1/2 C unbleached bread flour
- 3 1/2 t coarse kosher salt
- 2 1/4 t instant yeast (opt.)
- In Bosch, add starter and water, mix on low for about 1 minute.
- Add the flour and salt and yeast (if using).
- Mix on low for 2 minutes to form coarse ball that is very tacky and slightly warm.
- Let the dough rest for 5 minutes.
- Mix on medium low speed for 4 minutes more, adding flour or water as needed to make a soft, supple, slightly sticky ball of dough.
- Transfer to lightly floured surface and knead for 1 minute then form into ball. Let dough sit uncovered for 10 min, stretch and fold, form into ball.
- Place in clean, lightly oiled bowl large enough to dontain dough when doubled and cover. If using yeast, refrigerate the dough immediately. It will be good for p to 3 days.
