Butter Chicken

- 1/4 pint natural yogurt
- 2 ounces ground almonds
- 1 1/2 tsp chili powder
- 1/4 tsp crushed bay leaves
- 1/4 tsp ground cloves
- 1/4 tsp ground cinnamon
- 1 tsp garam masala
- 4 green cardamom pods
- 1 tsp ginger pulp
- 1 tsp garlic pulp
- 14 ounce can tomatoes
- 1 1/4 tsp salt
- 2 pounds chicken, skinned, boned and cubed
- 3 ounces butter
- 1 tbsp corn oil
- 2 medium onions, sliced
- 2 tbsp fresh coriander, chopped
- 4 tbsp cream
Chocolate/Cinnamon Cake

This is a wonderful recipe from my neighbor in Texas
- icing:
- 2 C flour
- 2 C sugar
- Sift together and set aside.
- 3/4 C butter
- 4 T cocoa
- 1 C water
- Bring to a boil, remove from heat, add four and sugar and stir well.
- 1/2 C buttermilk
- 1 t cinnamon
- 1 t soda
- 2 beaten eggs
- Bake at 400 degrees for 20 minutes in a greased 12 x 18 pan.
- 1 stick butter
- 4 T cocoa
- 6 T milk
- 3 3/4 C powdered sugar
- 1 t vanilla.
- Beat and spread on cake.
Pasta Salad with Thai Twist

In a big sauce pan place the coconut milk and curry paste and bring to a simmer
- Salad Ingredients:
- 1 lb. of linguine pasta cooked or 1 lb of rice noodles softened in hot water for 10 mins.
- 1 can coconut milk
- 1 T. green, yellow, or red curry paste or just use curry powder.
- 1/2 c. sugar
- 1/8 c. fish sauce or soy sauce
- 1 head Napa cabbage chopped
- peppers sliced (A combination of red, yellow, and orange is best. You know it's all about the presentation!)
- purple cabbage
- matchstick carrots if you don't have colorful peppers
- fresh bean sprouts
- a bunch of green onions sliced
- some cucumbers sliced
- 1 bunch of cilantro chopped or a lot of chopped fresh basil (Basil is best!)
- sliced water chestnuts
- a few big handfuls of baby spinach (you can add more or less of this to stretch the salad)
- Dressing Ingredients:
- 1 c. olive oil
- 3/4 c. rice wine vinegar
- 1 T. soy sauce
- 1/2 c. sugar
- 1/2 t. seasame oil (optional)
- 1/2 t. ground ginger
Ina's Lemon Cake

Preheat the oven to 350 degrees F
- For the glaze:
- 1/2 pound (2 sticks) unsalted butter, at room temperature
- 2 1/2 cups granulated sugar, divided
- 4 extra-large eggs, at room temperature
- 1/3 cup grated lemon zest (6 to 8 large lemons)
- 3 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 3/4 cup freshly squeezed lemon juice, divided
- 3/4 cup buttermilk, at room temperature
- 1 teaspoon pure vanilla extract
- 2 cups confectioners' sugar, sifted
- 3 1/2 tablespoons freshly squeezed lemon juice
Bacon Spinach Salad with Hot Dressing

In a large skillet, sear bacon over medium heat until crisp and brown
- # 7 oz. fresh baby spinach leaves
- # 2 tablespoons olive oil
- # 1/3 cup medium red onion, thinly sliced
- # 1/4 cup crumbled feta cheese
- # 7oz. package feta cheese, crumbled
- # 2 tablespoons Red wine vinegar, or herb flavored vinegar
- # 4 pieces of thick cut bacon, sliced into 2" pieces
- # 1 tablespoon sugar
- # Apple wedges, or croutons (optional)
Chocolate Ganache Cupcakes

Line muffin pans with 12 paper liners
- For the ganache:
- 1/4 pound unsalted butter, at room temperature
- 1 cup sugar
- 4 extra-large eggs, at room temperature
- 11 fluid ounces chocolate syrup (recommended: Hershey's)
- 1 tablespoon pure vanilla extract
- 1 cup all-purpose flour
- 1/2 cup heavy cream
- 8 ounces good semisweet chocolate chips
- 1 teaspoon instant coffee granules
Layered Strawberry Shortcake

In a small bowl, combine strawberries and sugar; cover and refrigerate until serving
- 4 cups sliced fresh strawberries
- 1/2 cup sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt

- 1/3 cup butter
- 3/4 cup buttermilk
- 2 tablespoons butter, melted
- 1 cup heavy whipping cream

- 3 lb. italian sausage
- 4 chopped onions
- 4 stalks celery
- 2 T parsley
- 4 C chopped carrots

- 2 t oregano
- 2 cans beef broth
- 2 qts. water

- 3 cups all-purpose flour, plus more for dusting the pans

- 1 cup milk
- 4 ounces sweetened shredded coconut
- 1 pound cream cheese, at room temperature
- 1/2 pound (2 sticks) unsalted butter, at room temperature

My Favorite Brownies

Bake 350 degrees for 35 minutes
- 2 cubes butter
- 1/2 c cocoa
- 2 c sugar
- Blend together.
- 4 eggs, add one at a time.
- 1 1/2 c flour
- 2 t vanilla
- 1 c chopped milk chocolate (good quality)
