Machaca Beef Enchiladas with Chipotle Sauce

Enchiladas Heat the oil in skillet over medium high heat (or in your deep fryer at 350degF)
- 10 corn tortillas
- 1/2 cup vegetable oil (Or you can use a deep fryer)
- 1 1/2 cup Machaca
- 2 cups Chipotle Sauce (Recipe Follows)
- 1 cup shredded Monterey Jack cheese
- Chipotle Sauce for Enchiladas
- 1 14oz can beef broth
- 1 14oz can diced tomatoes
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 chipotle peppers from a small can of chipotle peppers in adobo sauce
- 1 tablespoon vegetable oil
- salt and white pepper to taste
Tilapia with Green Beans

Combine the flour, oregano and parsley in a shallow dish
- 2 tablespoons all-purpose flour
- 2 teaspoons chopped fresh oregano, plus more for garnish
- 2 tablespoons chopped fresh parsley
- Kosher salt and freshly ground pepper
- 4 6-ounce tilapia fillets
- 4 tablespoons unsalted butter
- 1/2 pound thin green beans or haricots verts
- 1 clove garlic, chopped
- 1 cup grape or cherry tomatoes, halved
- Juice of 1 lemon
Gooey Butter Cake

Preheat oven to 350 degrees F
- Cake:
- 1 18 1/4-ounce package yellow cake mix
- 1 egg
- 8 tablespoons butter, melted
- Filling:
- 1 8-ounce package cream cheese, softened
- 2 eggs
- 1 teaspoon vanilla
- 8 tablespoons butter, melted
- 1 16-ounce box powdered sugar
Crescents Rolls filled with Chocolate

- 1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls
- 1/2 cup mini-chocolate chips
- Powdered sugar, if desired
Trout (or Salmon) with Caper-Garlic Lemon Butter Sauce

Season the tops of fish fillets with Italian herb seasoning and salt (generously)
- 1.5 lb steel head trout or salmon (3 fish fillets)
- 1 tablespoon Italian herb seasoning (dried thyme, oregano, parsley, combined)
- salt, to taste
- 1 tablespoon olive oil
- 2 tablespoons capers, drained
- 4 garlic cloves, diced
- 3 tablespoons lemon juice, freshly squeezed
- 2 tablespoons butter, softened
Cheese Crescent Triangles

Heat oven to 375°F. In small bowl, mix feta cheese, green onions and 3 tablespoons of the beaten egg
- 4 oz tomato-basil feta cheese, finely crumbled (1 cup)
- 2 tablespoons finely chopped green onions (2 medium)
- 1 egg, well beaten
- 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
- 1 tablespoon grated Parmesan cheese

- 1 can Pillsbury pizza dough (bottom crust)

- 2 cups sugar
- 1/2 cup water
- 1 cup light corn syrup

- 3 tablespoons EVOO – Extra Virgin Olive Oil
- Salt and pepper
- 1 bulb (5 to 6 cloves) garlic, peeled and chopped
- Freshly grated nutmeg (optional)
- 1 pound frozen chopped spinach, defrosted
- 1.5 pounds ziti rigate
- 1.5 pounds fresh ricotta cheese
- 1 deli container freshly grated Parmigiano-Reggiano cheese

- 1 cup barbecue sauce
- 1 cup sour cream
- 1 tablespoon olive oil
- 1 cup chopped red onion
- 1/4 cup (4 tablespoons) butter
- 1 pound shredded barbecue pork
- 1 cup shredded Cheddar
- 1 cup shredded Monterey jack cheese
- 1/2 cup fresh cilantro leaves
- 8 flour tortillas (10 inches
