Buffalo Chicken Macaroni and Cheese

Preheat oven to 400 degrees F
- 3/4 pound applewood smoked bacon
- 1 pound chicken tenderloins
- 1/2 cup beer
- 1 pound dry elbow macaroni
- 1/2 cup (1 stick) unsalted butter, plus 2 tablespoons, plus more for baking dish
- 1 tablespoon minced garlic
- 1/3 cup all-purpose flour, plus 1 cup
- 3 cups whole milk, plus 2 tablespoons
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 3 cups grated white Cheddar, divided
- 3 cups grated mozzarella cheese, divided
- 1/2 cup crumbled blue cheese
- 1 large egg
- 1 1/2 cups vegetable oil
- 2/3 cup hot sauce (recommended: Frank's Red Hot)
- 1 cup panko bread crumbs
Chicken Marsala Stuffed

Preheat oven to 400 degrees
- 4 medium boneless skinless chicken breasts
- 8 slices mozzarella cheese
- 1 12-ounce jar julienned sun dried tomatoes packed in oil, drained (if you can't find them julienned you can buy sun dried tomato halves and thinly slice them yourself)
- 2/3 cups shredded parmesan cheese
- 3 tbs oil
- salt and pepper, to taste
- 2 tsp Italian seasoning
- marsala sauce
- 1 1/2 cups marsala cooking wine (may sub chicken broth)
- 3 tsp minced garlic
- 1 cup sliced mushrooms
- 1/2 cup heavy cream
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- grated parmesan cheese and parsley or thyme for topping (optional)

Mix all peanut butter ball ingredients together in a small bowl
- Peanut Butter Balls:
- 1 SPLENDA® No Calorie Sweetener packet
- 1 packet SPLENDA® Flavors for Coffee, French Vanilla
- 1 tablespoon sugar free cocoa mix
- 1 tablespoon graham cracker crumbs
- 2 tablespoons peanut butter
- 1 1/2 teaspoons fat free cream cheese
- Garnish:
- 2 tablespoons graham cracker crumbs
- 2 teaspoons sugar free or no sugar added jam

- 2 teaspoons vegetable oil
- 1 pound ground beef
- 2 -inch piece ginger, peeled and finely grated
- 2 scallions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon red pepper flakes
- 1/4 cup hoisin sauce
- 1/4 cup chopped peanuts
- Salt and freshly ground black pepper
- 1 head Boston lettuce, leaves separated, cleaned and dried

- 1/2 pound (2 sticks) butter, plus more for pan
- 1/2 cup vegetable shortening
- 3 cups sugar
- 5 eggs
- 3 cups all-purpose flour, plus more for pan
- 1/2 teaspoon fine salt
- 1/2 teaspoon baking powder
- 1 cup milk
- 1 teaspoon vanilla extract
Italian Cream Cheese Chicken Crockpot

Cook on low in crockpot for 4- 6 hours
- 4 chicken breasts
- 1 packet Zesty Italian dressing seasoning
- 1 8 oz. cream cheese (softened)
- 1 cans cream of chicken soup
