- 4 medium boneless skinless chicken breasts (2 lbs), trimmed
- 1 lb button mushrooms, thickly sliced
- 1 medium onion, finely chopped
- 3-4 garlic cloves, minced
- Salt and Pepper
- Olive Oil
- 4 Tbsp unsalted butter
- 1/3 cup all-purpose flour
- 2 cups low sodium chicken broth
- 1 Tbsp lemon juice
- 1 1/2 cups half and half (or sub with equal parts milk & heavy cream)
- 1/4 cup fresh parsley, chopped, plus more to garnish
- 1 1/2 to 2 cups shredded mozzarella cheese
Pizza Naked with Basil & Garlic

- 14 ounce bag dried seasoned stuffing mix
- 1 sweet onion diced
- 1/2 cup diced celery
- 2 cans 10 ounces each cream of chicken soup
- 1/2 cup chicken broth
- 1/2 teaspoon ground sage
- 1 1/2 pounds boneless skinless chicken breasts
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
No-Fry Chimichanga

- 2 cups cooked chicken, chopped or shredded

- 1 teaspoon ground cumin

STIR FRIED SINGAPORE NOODLES WITH GARLIC GINGER SAUCE

- 4 ounces thin rice noodles
- 1 tablespoon oil
- 2 bell peppers, thinly sliced
- 2 shallots, thinly sliced
- 1 cup bean sprouts
- 1 teaspoon curry powder
- 1 cup sliced shiitake mushrooms
- 1 cup frozen peas
- sliced scallions for topping
- For the Sauce
- 1 cup low sodium chicken broth (vegetable broth for vegan/vegetarian)
- 1/4 cup low sodium soy sauce
- 3 tablespoons mirin
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger (I used a ginger paste)
- 1/2 teaspoon sambal oelek (adds spiciness - more to taste)
