Crockpot Orange Chicken

Toss chicken with flour in slow cooker
- 1 pound boneless chicken, cut in 2-inch chunks
- 3 tablespoons flour
- 1 ⁄3 cup orange marmalade
- 1 ⁄3 cup barbecue sauce
- 2 tablespoons soy sauce
- 1 tablespoon grated fresh gingerroot
Glazed Lime Cake

Preheat oven to 350ºF. Spray a 8x8x2-inch metal baking pan with nonstick cooking spray
- CAKE:
- 3/4 cup (1-1/2 sticks) butter, room temperature
- 11/2 cups powdered sugar, divided
- 2 large eggs, room temperature
- 1 tsp. vanilla
- 1/4 cup milk
- 1 1/3 cups flour
- 1 3/4 tsp. baking powder
- 1/2 tsp. salt
- 4-5 large limes
- 7 Tbsp. sugar
- 1 Tbsp. hot water
- GLAZE:
- 2 Tbsp. butter, melted
- 2 cups powdered sugar
- Zest of 1 lime
- 4-5 Tbsp. fresh lime juice
Panda Express Orange Chicken

Cut chicken pieces into 2-inch squares and place in large bowl
- Orange Chicken Sauce:
- 2 pounds boneless chicken pieces, skinned
- 1 egg
- 1 1/2 teaspoons salt
- White pepper
- Oil (for frying)
- 1/2 cup plus 1 tablespoon cornstarch
- 1/4 cup flour
- 1 tablespoon minced ginger root
- 1 teaspoon minced garlic
- Dash crushed hot red chiles
- 1/4 cup chopped green onions
- 1 tablespoon rice wine
- Orange Chicken Sauce (recipe below)
- 1/4 cup water
- 1/2 to 1 teaspoon sesame oil
- 2 teaspoons minced orange zest
- 1/4 cup juice from 1 large orange
- 1/2 teaspoon sugar
- 2 tablespoons chicken stock
- 1 tablespoon light soy sauce
- Combine all ingredients in small bowl and set aside.
Fries Thrice Cooked

Cut the potatoes into ⅓-inch-thick steak fries and transfer to a bowl of cold water
- 4 large baking potatoes, scrubbed but not peeled
- Kosher salt
- Vegetable oil, for frying
Buffalo Cauliflower

Preheat the oven to 450 degrees
- 1 head of cauliflower
- For the batter
- 1/2 cup all purpose flour
- 1/2 cup water
- dash of Frank's Wing Sauce (or Frank's Original Hot Sauce)
- 1/4 teaspoon garlic salt
- 1/4 teaspoon dried onion (I use Tastefully Simple's Onion Onion)
- For the buffalo sauce
- 1/4 cup Frank's Wing Sauce
- 3 Tablespoons salted butter, melted
- pinch of salt
Tuna Avacado Salad

Peel and mash avocado add the rest of the ingredients mixing after each addition
- 1 avacado
- 1 tbls plain yogurt
- 1 can (5 oz.) StarKist Solid White Tuna in Water, drained and broken apart
- 2 tsps. hot sauce (whatever brand you prefer)
- 2 lbls of chopped onion or scallion – give or take
- 2 tlbs of chopped banana peppers – give or take
- 2 tbls of chopped pickle – give or take
- 2 tbls of chopped celery – give or take
- Pepper to taste.
E-Z Chicken Tortilla Bake

Mix soup, salsa, milk, chicken, tortillas and half the cheese in 2-quart shallow baking dish
- 1 (10.75 ounce) can Campbell's® Condensed Tomato Soup (Regular or 25% Less Sodium)
- 1 cup Pace® Chunky Salsa or Pace® Picante Sauce
- 1/2 cup milk
- 2 cups cubed cooked chicken or turkey 8 (6 inch) corn tortillas, cut into 1-inch pieces
- 1 cup shredded Cheddar cheese
Chocolate Chip Cookies

Preheat oven to 350 degrees
- 8 tablespoons butter
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/4 teaspoon espresso powder, optional
- 2 teaspons vanilla extract
- 1 egg
- 1 2/3 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
Cheesy Broccoli Beef

In large skillet, cook 1 lb
- 1 package RICE-A-RONI® Broccoli Au Gratin
- 1 pound ground beef or turkey
- 2 1/2 tablespoons margarine
- 2 1/4 cups water
- 1 cup thin carrot slices (optional)
Brined Roasted Chicken and Vegetables

To brine the chicken, bring 2 quarts of water to a boil with the salt, light brown sugar, peppercorns and bay
- For the Brine:
- 1 cup Kosher salt
- 1/4 cup light brown sugar
- 1 teaspoon black peppercorn
- 1 large fresh bay leaf
- 1 lemon juice of
- Chicken:
- 1 to 2 3-pound chickens, spatchcocked (backbone removed) or left whole or 4 pieces of split breast and/or 4 dark meat quarters (leg and thigh attached)
- 3 tablespoons olive oil
- Salt and pepper
- 3 to 4 carrots or rainbow carrots, peeled and quartered lengthwise 1/2 pound green beans
- 3 large shallots, peeled and quartered lengthwise
