Quick Barley Soup

Cook chopped onions, garlic and sliced carrots in oil until tender

- a touch of ancho chile powder

Bloody Mary

Combine all ingredients in a highball glass filled with ice
- 1 to 1 1/2 oz vodka
- 6 to 8 oz of tomato juice (depending on the size of your glass)
- 1 dash of salt
- 1 dash of pepper
- 1 dash of tobasco sauce
- 2-4 dashes of worcestershire sauce
- 1/8 tsp horseradish (pure, never creamed)
- 1-2 dashes of Lemon juice
Roasted Olives

Preheat opven to 425F Lay out all ingredients on a sheet pan and toss to combine
- 1 Cup each any 3 types of Lindsay Olives, drained
- 1 pt cherry tomatoes
- 1 tablespoon Herves de Provence (if you can't find this, mix rosemary, thyme & basil)
- 8 whole garlic cloves
- 1/4 cup olive oil
- 1/4 teaspoon black pepper
Orange Juice Cake

Preheat oven to 350 degrees, and spray a bundt pan
- 1 box white cake mix
- 1 box orange jello
- 1 cup orange juice
- ¾ cup of vegetable oil
- 4 eggs
- 2 tablespoons orange juice
- 1 cup powdered sugar
- 1 orange
- 1 cup chopped pistachio nuts
Italian Club

Place tomatoes on a paper towel–lined cutting board and sprinkle with sea salt
- 2 large heirloom tomatoes, sliced 1/4" thick
- sea salt, such as Maldon
- 8 slices bacon
- 12 slices 1/2" thick Pullman bread, toasted
- 1/2 c. mayonnaise
- 1/4 lb. thinly sliced mortadella
- 2 c. spinach
- 1/2 lb. thinly sliced provolone
- 1/2 c. pesto
- 1/4 lb. thinly sliced ham
- 4 marinated artichoke hearts, sliced in half lengthwise
- 1/2 lb. thinly sliced Genoa salami

Crockpot Beef Stew

In a 6 quart crock pot, place the stew meat and the potatoes on the bottom
- 2-3 pounds of stew meat
- 1 - 16 oz frozen green beans
- 2-3 whole carrots, peeled and sliced
- 3 russet potatoes peeled and diced
- 1/2 onion, chopped
- 2 bay leaves
- salt and pepper to taste
- 1 14 oz can of crushed tomatoes
- 2 cups water
- 1/4 cup Worcestershire sauce
Chicken Taco Casserole

Preheat oven to 350 degrees F
- Nonstick cooking spray
- 12 ounces chicken breast strips for stir-frying
- 2 cloves garlic, minced
- 1 tsp chili powder
- 2 tsp canola oil
- 1 medium onion, halved and thinly sliced
- 3/4 cup chopped red or green sweet pepper (1 medium)
- 1 10 oz package frozen chopped spinach, thawed and squeezed dry
- 1 1/2 cups purchased salsa
- 4 6 inches corn tortillas, coarsely torn
- 3 oz reduced-fat Monterey Jack cheese, shredded (3/4 cup)
- 1/2 cup cherry tomatoes, quartered or chopped (optional)
- 1/2 of an avocado, halved, seeded, peeled, and chopped (optional)
- Corn chips, baked tortilla chips, or broken taco shells (optional)

- 1 3/4 cups warm water
- 2 cups instant brown rice, uncooked
- 4 small boneless skinless chicken breast (1 lb.)
- 1/4 cup KRAFT Lite Ranch Dressing
- 1 1/2 tsp. chili powder
- 1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
