Hearty Minestrone Soup

Place all ingredients except pasta and pesto in a large stockpot
- 3 Stalks Celery, sliced
- 3 Medium Carrots, peeled and sliced
- 1 Large Onion, chopped
- 2 32oz Cans Beef Broth
- 1 8 3/4oz Can Kidney Beans, rinsed and drained
- 1 6oz Can Tomato Paste
- 1 C Traditional Spaghetti Sauce
- 2 tsp Italian Herb Seasoning
- 3/4 C Small Shell Pasta
- Prepared Basil Pesto
Caramel Glazed Apple Cake

Preheat oven to 375 degrees
- Cake:
- 1 C Brown Sugar
- 1 C Sugar
- 1 1/2 C Vegetable Oil
- 3 Eggs
- 3 C Flour
- 1 tsp Baking Soda
- 2 tsps Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Salt
- 5 Apples, Cored,Peeled,& Cut 1/2" Pieces
- 1 1/4 C Chopped Walnuts
- 2 1/4 tsps Vanilla
- Caramel Glaze:
- 4 T Butter
- 1/4 C Sugar
- 1/4 C Brown Sugar
- Pinch of Salt
- 1/2 C Heavy Cream
Strawberry Shortcake - Family Size

Preheat oven tp 350 degrees
- 1 18.25 oz pkg White Cake Mix
- 1 1/2 quarts Fresh Strawberries
- 1/4 C Granulated Sugar
- 1 1/2 C Whipping Cream
- 1/4 C Confectioners' Sugar
- 1 tsp Vanilla Extract
Jell-O Beans

Spray jello bean mold lightly with cooking spray
- 1 1/4 C Boiling Water (do not add cold water)
- 2 4 serving size Package Jello Gelatin
Cheesy Nacho Bake

Brown meat;drain. Add tomatoes, 1/2 C water and seasoning mix
- 1 1/2 Lb. Ground Beef
- 1 14.5oz Can Diced Tomatoes, undrained
- 1 Pkg Taco Bell Taco Seasoning Mix
- 1 1/2 C Sour Cream, divided
- 1 Pkg (9oz) Tortilla Chips
- 1 Pkg (8oz) Colby Jack Cheese
Broccoli au Gratin

Trim broccoli; cut into 1 inch florets
- 1 Large Head of Broccoli
- 3/4 C Sour Cream
- 1/4 C Parmesan Cheese, grated
- 3 T Butter
- 1/2 C Bread Crumbs
- 1/2 C Swiss Cheese, shredded
Chicken Caesar Salad

Preheat boiler. Wash chicken and pat dry with paper towel
- THE DRESSING:
- 4 Boneless, Skinless Chicken Breasts
- 1 Head Romaine Lettuce
- 2 Hard Boiled Eggs
- 1/4 C Parmesan Cheese
- 1 C Seasoned Croutons
- 2 Cloves Garlic
- 1/4 C Parmesan Cheese, grated
- 1/4 C Olive Oil
- 2 T Fresh Lemon Juice
- 1 T Worcestershire Sauce
- 2 tsp Anchovy Paste (optional)
- 1/4 tsp Dry Mustard
Country Scrambled Eggs

Cook the bacon, add sliced potatoes, cook for 12 - 15 minutes
- 8 Slices of Bacon
- 1 Onion, Chopped
- 8 Eggs
- 1/4 Cup Milk
- Shredded Cheese
- Red Potatoes, Sliced
- Green Peppers, Chopped
- Salt
- Pepper
Aunt JoAnn's Chili

Brown beef and onions. Season with spices
- 2 1/2 Lbs Lean Ground Beef
- 1 28oz Can Crushed Tomatoes w/puree
- 1 7oz Can of Ortega Chopped Chiles
- 4 pkgs McCormick Chili Mix Original
- 1 T Cumin
- 4 15oz Can of Kidney Beans (slightly drained)
- Large Onion, chopped
- 2 T Chili Powder
- 1 T Garlic Salt
Spinach Artichoke Dip

Preheat oven to 375 degrees
- 1 14oz Can Artichoke Hearts,Drained and Chopped
- 1/2 10oz Package Chopped Spinach,Thawed
- 1/2 C Sour Cream
- 1/4 C Mayonnaise
- 1/4 C Cream Cheese
- 1/4 C Romano Cheese, Grated
- 1/4 tsp Garlic, Minced
