Potato Pie

Boil potatoes (with skin) until cooked
- 3 lbs of Idaho Potatoes
- 1/2 Stick of Butter
- 1 C of Romano Cheese
- 2 Eggs
- 1/2 Glass of Milk
- 1 8 oz Mozzarella, diced
- Salt
- Pepper
- 1/2 Bag of Breadcrumbs
Tofu Mayonnaise

Put all ingredients except oil in Vita mixer for a few seconds
- 1 C Firm or Silken Tofu
- 1 Small Glove Garlic, minced
- 1 tsp Good Mustard
- 2 tsp Cider Vinegar
- 1/4 tsp Sea Salt
- 1/4 C Olive Oil
Chocolate Zebra Cookies

Preheat over to 350 degrees
- 1 1/4 C Flour
- 1/2 C Cocoa Powder, unsweetened
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 3/4 C Butter, softened
- 3/4 C Brown Sugar, packed
- 1 Egg
- 1 tsp Vanilla
- 2/3 C Semi-sweet Chocolate Morsels
- 4 oz White Chocolate for baking, melted
Strawberry Chicken Salad

Remove meat from chicken; discard skin and bones
- 1 Rotisserie Chicken
- 1 16oz Container of Strawberries, cut into bite size pieces
- 1/2 C Green Onions, sliced
- 1/2 C Pecans, chopped and toasted
- 1/2 C Poppyseed Dressing
- Spring Mix Greens
Pork Chops & Scalloped Potatoes

Merinate pork chops in worchester sauce, pepper, and garlic salt
- 4 Pork Chops
- Oil
- Worchester Sauce
- Pepper
- Garlic Salt
- 4 Large Potatoes
- 1 Onion, Chopped
- 2 T Butter
- 2 T Flour
- 1 1/4 C Milk
Country Creamed Chicken

Saute chicken and thyme in oil 5 minutes or until chicken is cooked
- 3 Half Boneless, Skinless Chicken Breasts, cubed
- 1/2 tsp Thyme
- 1 T Oil
- 1 10 3/4oz Can Cream of Chicken Soup
- 1/2 C Milk
- 1 14 1/2oz Can Fresh Cut Green Beans, drained
Hot Artichoke Dip

Preheat oven to 350 degrees
- 1 pkg Lipton Onion Soup Mix
- 1 14oz Can Artichoke Hearts, drained and chopped
- 1 C Mayonnaise
- 1 8oz Container Sour Cream
- 1 C Swiss or Mozzarella Cheese, shredded
Manicotti Marinara

Cook pasta according to package
- 14 Pieces Ronzoni Manicotti, Uncooked
- 2 T Oil
- 2 C Green Peppers, Strips
- 1 C Onion, Sliced
- 2 Cloves Garlic, Minced
- 1 C Zucchini, Sliced
- 1 1/2 C Marinara Sauce
- 1 tsp Dried Basil
- 1 tsp Oregano Leaves
- 2 C Mozzarella Cheese, Shredded, Divided
- 1 3/4 C Ricotta Cheese
- 1 Egg, Slightly Beaten
- 1/4 C Parmesan Cheese, Grated
Spaghetti Pie

In a sauce pan cook spaghetti in a large amount of water for 10 - 12 minutes
- 4 Ounces Spaghetti, Cooked
- 1 T Butter
- 1 Egg, Beaten
- 1/4 C Parmesan Cheese, Grated
- 1 C Lowfat Cottage Cheese
- 1/2 lb Ground Beef
- 1/2 C Onion, Chopped
- 1/2 C Green Pepper, Chopped
- 1 Clove Garlic, Minced
- 1 8 oz Can Tomato Sauce
- 1/2 C Mozzarella Cheese, Shredded
Angel Hair Pasta with Chicken

Heat 1 T oil in medium skillet over medium heat; add chicken
- 2 T Olive Oil, divided
- 2 Skinless, Boneless Chicken Breasts, cut into squares
- 1 Carrot, sliced diagonally
- 1 10oz pkg Frozen Broccoli Florets, thawed
- 2 Cloves Garlic, minced
- 12 Oz Angel Hair Pasta
- 2/3 C Chicken Broth
- 1 tsp Dried Basil
- 1/4 C Parmesan Cheese, grated
