Enchilada Soup

Measure broth and water; set aside
- 3 1/2 C Beef Broth
- 2 C Water
- 1/2 Lb Ground Beef
- 1/2 C Red Bell Pepper, diced
- 1 Garlic Clove, pressed
- 1/4 C all-purpose flour
- 2 10oz Cans Enchilada Sauce
- 1 15oz Can Black Beans, drained and rinsed
- 1 C Zucchini, thinly sliced
- 1/4 C Snipped Fresh Cilantro
- 2 T Lime Juice
- Grated Monterey Jack Cheese
Easy Chicken Parmesan

Dip chicken into egg. Coat with bread crumbs
- 4 Boneless, Skinless Chicken Breasts
- 1 Egg
- 1/2 C Dry Bread Crumbs
- 2 T Olive or Vegetable Oil
- 2 C Prego Spaghetti Sauce
- 1/2 C Mozarella Cheese, Shredded
- 4 C Hot Spaghetti
Marinated Beef & Broccoli

Make a marinade of all ingredients except butter, broccoli, and onions; add sirloin to marinade
- 1 Lb Sirloin Steak, Cut in Strips
- 1/4 C Butter
- 3 C Broccoli
- 1 Onion, Chopped
- 3/4 tsp Ginger
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 T Lemon Juice
- 1 T Worcestershire Sauce
- 1 tsp Garlic, Chopped
- 4 C White Rice, Cooked
Savory Corn Fritters

Combine all ingredients except oil in large bowl until well mixed
- 1 Pkg (8.5oz) Jiffy Cornbread Mix
- 1 C Corn, Fresh,Canned or Frozen/Thawed
- 1/2 C Red Bell Pepper, Minced
- 1/2 C Onion, Minced
- 1 1/2 tsp Fresh Herbs, Chopped
- 2 Eggs
- Oil for Frying
Spicy Tortilla Casserole

Preheat oven to 375 degrees and spray 8 inch baking dish
- 1 14.5oz Hot-Medium Salsa
- 1 7 3/4oz El Pato Tomato Sauce
- 9 Taco Size Corn Tortillas, divided
- 1 16oz Refried Beans
- 1 C Cheddar Cheese, Shredded & Divided
- 2 C Cooked Chicken, Shredded
- Shredded Lettuce
- Sliced Olives
Quick Minestrone

Combine all ingredients in large pot except cheese
- 1 C Carrots, Thinly Sliced
- 1/2 C Celery, Sliced
- 1/2 C Onion, Chopped
- 1 Small Zucchini, Sliced
- 2 Cans (14.5oz each) Chicken Broth
- 2 C Water
- 1 Can (28oz) Diced Tomatoes, Undrained
- 1 Can (15.5oz) Dark Red Kidney Beans, Rinsed and Drained
- 1 C Medium Shell Pasta, Uncooked
- 1 C Frozen Italian Sytle Green Beans
- 1 tsp each: Dried Oregano Leaves,and Dried Basil Leaves
- 1/2 C Parmesan Cheese, Grated
Farmer's Strata

In a skillet, cook bacon until crisp; add ham and onion
- 1 Lb Bacon, Sliced into 1/2" pieces
- 2 C Cooked Ham, Chopped
- 1 Onion, Chopped
- 10 Slices White Bread, Cubed
- 1 C Potatoes, Cooked & Cubed
- 3 C (12oz) Cheddar Cheese, Shredded
- 8 Eggs
- 3 C Milk
- 1 T Worcestershire Sauce
- 1 tsp Dry Mustard
- Pinch Salt
- Pinch Pepper
Ham and Cheese Quiche Cups

- 36 Square Won Ton Wrappers
- 1 1/2 C Swiss Cheese, shredded
- 1/2 C Cooked Ham, chopped
- 1/2 C Green Onions, sliced
- 6 Eggs
- 1 C Half & Half
- Garlic Salt
- Pepper

- 1 1/2 C Graham Cracker Crumbs
- 2 T Sugar
- 1/4 C (1/2 stick) Butter, melted

- 1 1/3 C Sugar
