Coat a microwave-safe 9" x 13" baking dish with nonstick cooking spray
- 2/3 cup instant rice
- 1 (14-1/2 ounce) can stewed tomatoes
- 1 can (16 ounce) kidney beans, rinsed and drained
- 1 can (5-1/4 ounces) whole-kernel corn, drained
- 6 pork loin chops, 1/2 inch think (2 pounds total)
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup salsa
- 1 teaspoon chili powder

In a large bowl, combine the sour cream, soup, chilies and olives
- 1-1/2 cups (12 ounces) reduced-fat sour cream
- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
- 1 can (4 ounces) chopped green chilies
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 4 cups cubed cooked chicken breast
- 1 cup (4 ounces) shredded reduced-fat Monterey Jack or Mexican cheese blend, divided
- 1 cup (4 ounces) shredded reduced-fat cheddar cheese, divided
- 12 fat-free flour tortillas (6 inches), warmed
- 4 green onions, thinly sliced
Tipton Family Spaghetti Sauce

In a large stockpot, mix together all ingredients except tomato paste
- 1/2 bushel or 30 lbs. tomatoes, peeled, halved and seeded
- 3 lbs. onions, chopped
- 1 to 2 c. oil
- 1/2 c. sugar
- 1/2 c. canning salt
- 2 T. dried oregano
- 2 T. dried basil
- Optional: minced garlic and sweet & hot peppers to taste
- 4 12-oz. cans tomato paste
- 20 T. lemon juice
- 10 1-quart canning jars and lids, sterilized

- 2 tablespoons Vegetable Oil
- 1 large egg
- 1/8 to 1/4 teaspoons mint extract (optional)
- 1/2 cup Vanilla Flavored Frosting
- Thin chocolate-mint candies
Streusel Apple Pie in a Frying Pan

- For the topping:
- 1/3 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon

- 1 doz. eggs, hard-boiled and peeled
- 3 to 4 T. coleslaw dressing
- 1/8 to 1/4 t. garlic salt with parsley
- Garnish: paprika, snipped fresh chives
Banana Nut Peanut Butter Bread

1.Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 eggs, beaten
- 1 1/2 cups mashed banana (5 medium)
- 1 cup sugar
- 1/2 cup cooking oil or melted butter or margarine
- 1/4 cup chopped walnuts
- 1/4 c of peanut butter (optional)
- 1 recipe Streusel-Nut Topping (optional)
KAHLUA CHOCOLATE CAKE

In a large bowl, combine cake mix, eggs, sour cream, Kahlua, and vegetable oil
- 1 (18.5 oz.) pkg. Devil's Food Cake Mix
- 4 eggs
- 1 Cup Sour Cream (I use full strength, not lite)
- 1 Cup Kahlua (or coffee flavored liqueur)
- 3/4 Cup vegetable oil
- 1 (6-oz.) pkg. semi-sweet chocolate chips (that can be optional if you like)
Portuguese Pot Roast

- Marinade:
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup vinegar
- 1 1/4 cup wine
- 1 tablespoon horseradish
- 1 tablespoon brown sugar
- 1 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Roast:
- 3 to 4 pound chuck or rump roast
- 1/2 cup flour
- 2 tablespoons oil
- Gravy:
- Cornstarch and water
