Heat large saucepan over medium heat
- 3/4 pound pork, diced
- 1 can corn, drained
- 1 can black beans, drained
- 1 red pepper, diced
- 2 cans (8 oz each) Tomato Sauce
- 1 teaspoon ground cumin
- 2 cups chicken broth
- 1 can (10 oz each) Ro*Tel® Mild Diced Tomatoes & Green Chilies, undrained
- 1 (1.25-oz )package taco seasoning mix
Chicken Enchiladas with Tomatillo Sauce

1. Season chicken with Adobo
- Chicken Filling:
- 2 lbs. chicken breast
- GOYA® Adobo with Pepper, to taste
- 1/2 white onion
- 4 cloves fresh garlic, peeled or 2 tsp. GOYA® Minced Garlic
- 1/3 cup Mexican crema or sour cream
- Sauce:
- 2 cans (26 oz.) GOYA® Whole Tomatillos, drained
- 3 Whole Jalapeño Peppers, stemmed
- 1 1/2 tsp. GOYA® Minced Garlic or 3 cloves fresh garlic, minced
- 1/2 cup chopped white onion
- 3 tbsp. chopped cilantro
- 1 tbsp. Corn Oil or GOYA® Vegetable Oil
- 1 tsp. GOYA® Adobo with Pepper
- Enchiladas:
- 1/3 cup Corn Oil or Vegetable Oil
- 12 Corn Tortillas
- 1 cup Mexican crema or 1 cup sour cream thinned with 2 tbsp. milk
- 1/2 white onion, very thinly sliced and broken into rings
- 1 cup queso fresco (fresh cheese), crumbled
Red Velvet White Chocolate Chip Brownies

Preheat oven to 325°F and line a 8" x 8" square pan with non-stick aluminum foil
- Bars:
- 1 package Red Velvet Decadent Cupcake Mix
- 2 large egg yolks
- 1/2 cup (1 stick) + 1 tbsp. unsalted butter, melted 1/4 cup water
- 1 tbsp. corn syrup
- 1/3 cup white chocolate chips
- Frosting:
- 1 pouch frosting mix (included in package)
- 1/2 stick (1/4 cup) of unsalted butter, softened
- 4 tsp. water

- 2 cups pancake and baking mix
- 1 tablespoon light brown sugar
- 3/4 cup milk
- 1 cup shredded Cheddar cheese
- 1/2 stick (1/4 cup) butter, melted
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 teaspoon chopped fresh parsley

- 1 tablespoon sugar
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 1 teaspoon ground red pepper
- 3 tablespoons pure Italian olive oil*
- 2 chicken breast, pounded or flattened and cut in half
- Juice of 1 Orange
- 2 tablespoons sugar
- 1 teaspoon cornstarch
- 4 toasted hamburger buns (or wrap in Tortilla)
- 4 tomato slices
- Iceberg lettuce
- 4 onion slices (optional)
- Crystal hot sauce to taste
- 16 Dill pickle slices (optional)
