Unforgettable No Mayo Potato Salad

• Boil potatoes in their skins until just tender
- 2 pounds small red potatoes
- 1/3 cup peanut or other vegetable oil
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 3 tablespoons fresh dill, finely chopped
- 1/4 cup red onion, finely chopped
- 1 tablespoon Dijon mustard
- salt and pepper, to taste
- 1/2 pound green beans, halved, optional
Slow-Cooker Pulled Pork Fajitas

1 Place pork in 3 to 4-quart slow cooker
- 1 pork boneless loin roast (2 1/2 lb), trimmed of fat
- 2 tablespoons fajita seasoning (from 3-oz container)
- 1 cup Thick ‘n Chunky salsa
- 1 bag (1 lb) frozen stir-fry bell peppers and onions, thawed
- 2 packages (11.5 oz each) flour tortillas for burritos (16 tortillas), warmed
- 2 cups shredded Mexican-style taco cheese (8 oz)
- 1 cup sour cream, if desired

1 Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently
- 1 lb. lean ground beef
- 1 (26 to 28-oz.) jar tomato pasta sauce
- 1 (8-oz.) can no-salt-added tomato sauce
- 1/2 (9-oz.) pkg. (about 8) no-boil lasagna noodles
- 1 (1-lb.) jar Alfredo pasta sauce
- 12 oz. (3 cups) shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Coca-Cola Cupcakes

Preheat the oven to 325 degrees F
- Cupcakes:
- 2 cups Coca-cola (do not use diet!)
- 1 cup dark unsweetened cocoa powder
- 1/2 cup (1 stick) unsalted butter, cut into 1-inch pieces
- 1 1/4 cups granulated sugar
- 1/2 cup firmly packed dark brown sugar
- 2 cups all-purpose flour
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- Whipped Cream Frosting:
- 1 1/2 cups of heavy whipping cream
- 4 tablespoons of powdered sugar
- 1/2 teaspoon of vanilla extract
- Maraschino cherries (for topping)

- 3 sweet potatoes (washed), cut into thin slices
- 1 sweet onion, chopped into small pieces
- 1 cup fresh spinach leaves,with stems removed
- 1 cup sour cream
- 1 cup milk
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated cheddar cheese

- 1 loaf frozen bread dough, thawed
- 8-oz. bottle Russian or Thousand Island salad dressing, divided
