Impossibly Easy Pizza Bake

1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 3 1/3 cups Original Bisquick™ mix (from a 2 lb 8 oz box)
- 1 cup milk
- 1 jar (14 oz) pizza sauce
- 1 package (7 oz) sliced pepperoni
- 1 bag (8 oz) shredded mozzarella cheese (2 cups)
Wild Strawberry Spice Muffins

In a bowl, combine all the dry ingredients
- Topping (optional):
- 1 3/4 cup flour
- 1/2 cup sugar
- 2 1/2 tsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1 egg, lightly beaten
- 3/4 cup milk
- 1/3 cup butter
- 1 cup wild strawberries
- 1 Tbsp sugar
- 1/4 tsp cinnamon
Boston Lettuce Salad with Green Goddess Dressing

In a blender, combine the first 10 ingredients; cover and process for until smooth
- 1/3 cup mayonnaise
- 1/4 cup fresh baby spinach
- 2 tablespoons sour cream
- 1 tablespoon chopped green onion (green part only)
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced fresh tarragon
- 1-1/2 teaspoons lemon juice
- 1-1/2 teaspoons tarragon vinegar or white wine vinegar
- 1 teaspoon anchovy paste (I MAKE MY OWN OUT OF CANNED ANCHOVIES)
- 1/4 teaspoon pepper
- 6 cups Boston lettuce
- 4 radicchio leaves, torn
- 1 small cucumber, halved and sliced
- 1 cup cherry tomatoes, halved
Cheesy Dill Sauce

Place all ingredients in a large bowl and mix
- 2 1/2 cups mayonnaise
- 3/4 cup sour cream
- 2 tablespoons fresh lime or lemon juice
- 3 tablespoons snipped fresh dill
- 2 teaspoons pepper
- 1 garlic clove, mashed
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1/4 cup finely minced onion
Elegant Chocolate Angel Trifle

1. Remove top oven rack; move other rack to lowest position
- 1/3 cup HERSHEY'S Cocoa
- 1 package (16 oz.) angel food cake mix
- 2 envelopes (1.3 oz. each) dry whipped topping mix
- 1 cup cold nonfat milk
- 1 teaspoon vanilla extract
- 1 cup strawberry puree*
- Strawberries(optional)
Simple Shrimp Pad Thai

Cook noodles according to package directions
- 8 ounces uncooked thick rice noodles
- 1 pound uncooked medium shrimp, peeled and deveined
- 3 garlic cloves, minced
- 2 tablespoons canola oil
- 2 eggs, beaten
- 1 cup marinara sauce
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons brown sugar
- 1/4 cup chopped dry roasted peanuts
- Fresh cilantro leaves
- 1 medium lime, cut into wedges
- Sriracha Asian hot chili sauce or hot pepper sauce, optional
Fiesta Ranch Chicken Pasta Salad

Cook pasta, drain and cool
- 1 pkg. of pasta (rotini, bowtie, tri-colored, etc)
- 3 boneless chicken breasts, cooked and diced (I usually use a rotisserie chicken)
- 1 packet taco seasoning mix
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 package frozen corn
- 1 onion, chopped
- 1 green pepper, chopped
- 1 can of olives, sliced
- 2 cups grated cheddar cheese
- 2 tomatoes, chopped
Parmesan Zucchini and Corn

Heat olive oil in a large skillet over medium high heat
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 zucchinis, diced
- 1 cup corn kernels, frozen, canned or roasted
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- Kosher salt and freshly ground black pepper, to taste
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro leaves
- 2 tablespoons grated Parmesan, or more, to taste

In a large bowl, combine shredded cabage and carrot
- 4 cups finely shredded cabbage
- 1/2 cup shredded carrot
- 1/4 cup shredded purple onion
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 teaspoons Dijon mustard
- 2 teaspoons apple cider vinegar (or lemon juice)
- pinch ground cumin (optional)
- salt, to taste
- ground black pepper, to taste

1 Heat oven to 375°F. Line 2 cookie sheets with cooking parchment paper
- Crust:
- 2 cups all-purpose flour
- 1 cup cold butter
- 1/4 cup water, if needed
- Filling:
- 2 oz cream cheese, softened
- 1 1/2 teaspoons granulated sugar
- Dash salt
- 1 tablespoon egg white
- 16 teaspoons strawberry jam
- Egg Wash:
- 1 egg
- 1 teaspoon water
- Icing:
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 1 to 3 teaspoons milk
