Apple Upside-Down Cake #2

Preheat oven to 350 degrees F
- 3 tart apples, peeled, cored, and cut into 1/4-inch slices
- 1 cup apple cider or juice plus extra for cake mix
- 1/3 cup (5-1/2 tablespoons) butter
- 1 cup firmly packed brown sugar
- 10 to 12 maraschino cherries, cut in half
- 1/2 cup chopped walnuts
- 1 (18.25-ounce) package spice cake mix
Lemon Curd

Fill a small pot with about 1 inch of water and place on the stove over medium heat
- 3/4 cup fresh lemon juice (from 4-6 lemons)
- zest from 1 lemon
- 3/4 cup sugar
- 3 eggs
- 1/2 cup butter, cut into small cubes
Beef and Potato Stew

1.Season meat with adobo. 2
- 2 lbs. boneless beef chuck, cut in 1 inch cubes
- GOYA® Adobo with pepper, to taste
- 3 tbsp.
- Extra Virgin Olive Oil
- 2 cups onion, diced
- 1 cup green pepper, diced
- 2 tbsp. Minced Garlic or 4 cloves fresh garlic minced
- 1/2 can Tomato Sauce
- 2 tbsp. GOYA® Sofrito
- 2 tbsp. White Vinegar
- 1/2 tsp. leaf oregano
- 2 Bay Leaves
- 2 cups water
- 1 packet Powdered Beef Bouillon
- 1 packet Sazón GOYA® with Coriander and Annatto
- 2 lbs. potatoes, peeled and cut in 1 inch cubes
- 1 lb. carrots, peeled and cut in 1/2 inch dice
- 1/3 cup GOYA® Pitted Alcaparrado, sliced
- 1 tbsp. Capers, drained
- 3 cups cooked Canilla Extra Long Grain Rice

Preheat oven to 350 F. In large bowl, mix together everything except for chocolate chips
- 1 box Devil’s Food cake mix
- 1 small pkg Jello instant chocolate pudding mix
- 1 cup sour cream
- 1 cup vegetable oil
- 4 eggs, beaten
- 1/2 cup milk
- 1 tsp vanilla
- 2 cups mini chocolate chips
- crushed Skor Candy Bars

- 1 c. water
- 3/4 c. sugar
- 3 T. lime juice
- 1-1/2 t. fresh mint, chopped
- 5 c. watermelon, cubed
- 3 c. cantaloupe, cubed
- 3 c. honeydew, cubed
- 2 c. nectarines, pitted and sliced
- 1 c. blueberries
