Quick Sweet and Sour Pork

Cook rice according to package directions, omitting salt and butter
- 2 cups instant brown rice, uncooked
- 1 tablespoon Canola Oil
- 1 pound pork tenderloin, cut into 1-inch pieces
- 3 cups frozen bell pepper and onion strips (from 16-oz package)
- 1 can (8 oz each) pineapple chunks in juice, drained
- 1 jar (10 oz each) Sweet and Sour Sauce
- 1 tablespoon Soy Sauce
White Chocolate Mint Cake

Preheat the oven to 325 F
- Cake:
- 2 1/2 cups cake flour
- 3/4 cup all-purpose flour
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 cup (that's 1 stick) unsalted butter, softened
- 1/2 cup vegetable shortening
- 1 3/4 cups sugar
- 1/4 teaspoon pure peppermint extract (don't measure over the bowl of ingredients...a little bit of this stuff goes a very long way!)
- 1 egg
- 1 1/2 cups ice cold water
- 3 large egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- Frosting:
- 6 ounces white chocolate, coarsely chopped (try to use a high quality chocolate. White chocolate can be finicky when it's melted.)
- 1 1/2 cups granulated sugar
- 1/3 cup all-purpose flour
- 1 1/2 cups milk
- 1/3 cup heavy cream
- 1 1/2 cups (that's 3 sticks) unsalted butter, cut into small pieces, and not quite room temperature (You don't want the butter to me mushy-soft)
- 1 teaspoon pure vanilla extract
