Ingredients

  • 1/3 cup mayonnaise
  • 1/4 cup fresh baby spinach
  • 2 tablespoons sour cream
  • 1 tablespoon chopped green onion (green part only)
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh tarragon
  • 1-1/2 teaspoons lemon juice
  • 1-1/2 teaspoons tarragon vinegar or white wine vinegar
  • 1 teaspoon anchovy paste (I MAKE MY OWN OUT OF CANNED ANCHOVIES)
  • 1/4 teaspoon pepper
  • 6 cups Boston lettuce
  • 4 radicchio leaves, torn
  • 1 small cucumber, halved and sliced
  • 1 cup cherry tomatoes, halved

Preparation

Step 1

In a blender, combine the first 10 ingredients; cover and process for until smooth.

In a large bowl, combine the lettuce, radicchio, cucumber and tomatoes. Serve with dressing.
