I like using chicken tenderloins but if you use chicken breasts pound them a little first.
- Chicken tenderloins or chicken breasts
- seasoned bread crumbs
- Panko bread crumbs
- olive oil
- 1 large lemon
- baby salad greens
- green onion
Dip tenderloins in egg and then seasoned bread crumbs mixed with Panko and some Parmesan and fry in olive oil. Cook until just done and remove from heat and squeeze some lemon over and add parmesan.
Make salad dressing with the rest of the lemon and whisk in olive oil, salt and pepper. Toss with salad and serve with chicken.
