Chocolate Cake

Preheat the oven to 350 degrees F
- Chocolate Frosting:
- Butter, for greasing the pans
- 1 3/4 1 3/4 3/4 cups all-purpose flour, plus more for pans
- 2 2 2 cups sugar
- 3/4 3/4 3/4 cups good cocoa powder
- 2 2 2 teaspoons baking soda
- 1 1 1 teaspoon baking powder
- 1 1 1 teaspoon kosher salt
- 1 1 1 cup buttermilk, shaken
- 1/2 1/2 1/2 cup vegetable oil
- 2 2 2 extra-large eggs, at room temperature
- 1 1 1 teaspoon pure vanilla extract
- 1 1 1 cup freshly brewed hot coffee
- 6 6 6 ounces good semisweet chocolate (recommended: Callebaut)
- 1/2 1/2 1/2 pound (2 sticks) unsalted butter, at room temperature
- 1 1 1 extra-large egg yolk, at room temperature
- 1 1 1 teaspoon pure vanilla extract
- 1 1/4 1 1/4 1/4 cups sifted confectioners' sugar
- 1 1 1 tablespoon instant coffee powder
Cod (Pan-Seared) with Fennel Ragout

Recipe from John and Barb's cooking class!
- 4 slices bacon, cut into 1/4" strips
- 3 T. olive oil
- 2 large fennel bulbs, stalks trimmed and discarded, each bulb cut into 8 wedges
- salt & pepper
- 1 3/4 c. chicken broth
- 2/3 c. heavy cream
- 1/2 c. chpd drained oil-packed sun-dried tomatoes
- 3 lg garlic cloves, finely chpd
- 4 (7 - oz) pieces cod, scrod or halibut (about 1" thick)
- 1 T. Dijon mustard
- chpd parsley for garnish
Creamy Sausage and Tomato Pasta

1) Cook the pasta in salted water al dente, according to package directions
- 1 lb of homemade "Esposito" Italian sausage
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 (16 ounce) can Italian style diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1 cup heavy cream
- 5-6 big leaves of fresh basil, chopped
- 12 ounces penne past
- grated Parmesan for topping
Fettuccine Alfredo

Cook fettuccine, drain well
- 8 oz fettucine
- 1/2 cup butter
- 1/2 whipping cream
- 3/4 cup parmesan
- 1/4 tsp white pepper
- 2 T. fresh parsley, chopped
Lemon Halibut with Caper Sauce

Paste: Whisk together all ingredients and rub the halibut fillets on all sides
- Paste:
- 4 Halibut fillets, about 6 oz each 1 1/4" thick
- 2 T. olive oil
- 1 T. Italian parsley, chpd fine
- 1 T. grated lemon zest
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- Sauce:
- 2 T. olive oil
- 2 T. fresh lemon juice
- 2 T. oil packed sun dried tomatoes, chpd finely
- 2 T. capers
- 1 T. Italian parsley, chpd fine
- 1/2 tsp sugar
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp salt
Huevos Rancheros Casserole

I bought the chorizo from Caputo's deli, it's a lot less greasy
- 10-12 corn tortillas
- 3 c. sharp cheddar or pepper jack, finely shredded
- 1 lb chorizo, cooked
- 2 - 4 oz cans chopped green chilies
- 12 eggs
- 1 c. milk
- 1 tsp oregano
- 1/2 tsp ground red pepper
- salsa, pico de gallo, sour cream and fresh avocado
Cheesy Hash Brown Potato Casserole

Everyone loves this one!
- 2 lb. bag frozen hash browns
- 1 tsp. salt
- 1/2 c. chopped onion
- 1 pt. sour cream
- 3/4 c. melted butter
- 1/4 tsp. pepper
- 1 can cream of chicken soup
- 2 c. grated sharp cheddar
- 2 c. crushed corn flakes
- Mix together all ingredients except corn flakes and 1/2 cup butter. Pour it all into 9"x13" pan. Cover with remaining ingredients. Bake at 350 degrees for 1 hour.
Polenta - creamy herbed w/ mushrooms

In slow cooker
- 4 c. Chicken stock
- 1 c. Stone ground polenta
- Salt & pepper
- 1 T. Butter
- 1 T. Olive oil
- 1 lg shallot, finely chopped
- 3/4 lb cremini mushrooms, cleaned and quartered
- 3 cloves garlic, minced
- 2 T. Flat leaf parsley, chopped coarsely
- 2 tsp. Each minced fresh oregano and thyme, plus more for garnish
- 1/2 c. Grated Parmesan
- 1 c. Fresh or Frozen corn, thawed
Watermelon and Blue Cheese Salad

Very different and delicious!
- For Dressing:
- 12-16 1-inch thick chunks ripe watermelon
- 3 ounces crumbled blue cheese
- 1 shallot, finely chopped
- 1/4 cup champagne vinegar
- 1/4 cup olive oil or canola oil
- 1 tablespoon chopped fresh thyme
- Salt and pepper
- 1/3 cup roasted pine nuts
Thai Cucumber Salad

- Dressing:
- 2 cucumbers, seeded, cubed or sliced (you can also peel them if you like)
- 1/4 cup red or white onions, chopped
- 1/4 jalapeno pepper, seeded, and finely chopped (add only if you like spicy heat)
- 5 - 6 Tbsp. chopped cilantro
- 3 Tbsp. peanut oil
- 1/2 cup rice wine vinegar
- 1 Tbsp. soy sauce
- 1 Tbsp. Thai garlic chili pepper sauce (this is not HOT sauce at all)
- 2 Tbsp. freshly squeezed lime juice
- 1/4 cup sugar
- Zest of one lime
- 1 tsp. salt
- 1/4 tsp. white pepper
- Red pepper flakes (sprinkle on only as much as you like or eliminate for no heat addition)
- 1/4 - 1/2 cup finely chopped unsalted dry roasted peanuts (optional)
