Barbecue Sauce (Tante Helga's)

Melt butter and simmer onions for about 5 minutes
- 2 sticks butter
- 2 cups onions, chopped
- 2 cups ketchup
- 1 1/3 cup brown sugar
- 1/3 cup chili powder
- 2/3 cup worcestershire sauce
- 1 tsp. pepper
- 1 tsp. Tabasco
Taco Seasoning - homemade

Mix together all ingredients
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper
Gorgonzola Polenta

Bring water to boil, slowly add polenta, whisking
- 1 c. instant polenta
- 4 c. salted water
- 1 T. butter
- 1/4 c. crumbled gorgonzola
- 1 T. oregano
- dash of nutmeg

Classic Swedish Meatball recipe
- 2 slices fresh white bread
- 1/4 cup milk
- 3 tablespoons clarified butter, divided
- 1/2 cup finely chopped onion
- A pinch plus 1 teaspoon kosher salt
- 3/4 pound ground chuck
- 3/4 pound ground pork
- 2 large egg yolks
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground allspice
- 1/4 teaspoon freshly grated nutmeg
- 1/4 cup all-purpose flour
- 3 cups beef broth
- 1/4 cup heavy cream

- 8 cups whole milk (half gallon)
- 4 cups heavy cream (quart)
- 2 tsp kosher salt

Penne Gorgonzola with Chicken

Cook the pasta to according to package directions
- 1 lb penne pasta
- 1 lb boneless skinless chicken breasts, cut into 1/2" pieces (I used rotisserie chicken)
- 1 T. olive oil
- 1 large garlic cloves, minced (I used 2 cloves)
- 1/4 cup white wine
- 1 cup heavy whipping cream
- 1/4 cup chicken broth
- 2 cups (8 ounces) crumbled Gorgonzola cheese
- 6-8 fresh sage leaves, thinly sliced
- salt and pepper to taste
- Grated Parmigiano-Reggiano cheese or minced fresh parsley
Seven Layer Salad

- 1 large head lettuce, shredded
- 1/2 cup green onion, chopped
- 1/2 cup celery, diced
- 1 6 oz can water chestnuts, sliced
- 1 - 10 oz frozen peas
- 1 1/2 cup Thousand Island dressing
- 1 lb bacon, fried and crumbled
- 1 1/2 cup grated cheddar
