Chicken Tortilla Soup

Pioneer Woman recipe - tweaked a little!
- GARNISHES:
- 2 whole Boneless, Skinless Chicken Breasts or 3 c. rotisserie chicken
- 1 T Olive Oil
- 1 tsp Cumin
- 1 tsp Chili Powder
- ½ tsp Garlic Powder
- ½ tsp Salt
- 1 T Olive Oil
- 1 cup Diced Onion
- 1 Green Bell Pepper, diced
- 1 Red Bell Pepper, diced
- 3 cloves Garlic, Minced
- 1 can Rotel Tomatoes And Green Chilies
- 32 oz, Chicken Stock
- 3 T Tomato Paste
- 4 cups Hot Water
- 2 cans Black Beans, Drained
- 3 T Cornmeal Or Masa
- 5 whole Corn Tortillas, Cut Into Uniform Strips Around 2 To 3 Inches
- Sour Cream (mixed with a little fresh lime juice?)
- Diced Avocado
- Diced Red Onion
- Salsa Or Pico De Gallo
- Grated Monterey Jack Cheese
- Cilantro
Pumpkin Cheesecake

- Crust:
- 1 3/4 cups graham cracker crumbs
- 3 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 1 stick melted salted butter
- Filling:
- 3 (8-ounce) packages cream cheese, at room temperature
- 1 (15-ounce) can pureed pumpkin
- 3 eggs plus 1 egg yolk
- 1/4 cup sour cream
- 1 1/2 cups sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon fresh ground nutmeg
- 1/8 teaspoon ground cloves
- 2 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
Green Beans Gremolata

- 1 pound French green beans, trimmed
- 2 teaspoons minced garlic (2 cloves)
- 1 tablespoon grated lemon zest (2 lemons)
- 3 tablespoons minced fresh flat-leaf parsley
- 3 tablespoons freshly grated Parmesan cheese
- 2 tablespoons toasted pine nuts
- 2 1/2 tablespoons good olive oil
- Kosher salt and freshly ground black pepper
Buttermilk Fried Chicken

Toss chicken, buttermilk and 1 tsp salt in a bowl
- 1 3 1/2 lb chicken, cut up
- 2 c buttermilk
- salt
- vegetable oil, for frying
- 1 c self-rising flour
- 1/2 tsp paprika
- freshly ground pepper
- 1/2 tsp garlic powder
Sweet Peas with Prosciutto

Heat oil in a 12" skillet over medium heat
- 1 ⁄4 cup extra-virgin olive oil
- 2 oz. prosciutto, roughly chopped
- 1 small white onion, minced
- 1 lb. fresh or frozen green peas
- Kosher salt and freshly ground black pepper, to taste
Chèvre Chaud Salad w/ Limoncello Dressing

Form goat cheese into medallions and refrigerate
- Arugula
- sliced grapes
- marcona almonds
- lemon slices
- goat cheese
- DRESSING
- 1/4 c. grapeseed oil
- 1 T. limoncello
- 1 garlic clove, minced
- 1/2 t. rosemary, chopped
- lemon zest, from 1/2 lemon
- salt and pepper
- Place all ingredients in a small jar and shake well
Spicy Snackers

- 1 cup canola or vegetable oil
- 2 (1-ounce) packages Ranch dressing mix
- 3 tablespoons red pepper flakes
- 1 (24 ounces) bag Cheez-It crackers
Greek Roast Chicken Oregano

Rinse and dry chicken. Season inside and out with salt and pepper
- 1 roasting chicken, 3-4 lbs
- 1/4 c. olive oil
- 2 1/2 lemons
- 2 tsp oregano
- salt and freshly ground pepper
- potatoes, cut up (enough for 4 people)
Shrimp Salad

- 3 tablespoons plus 1 teaspoon kosher salt
- 1 lemon cut into quarters
- 4 pounds large shrimp in the shell (16 to 20 shrimp per pound)
- 2 cups good mayonnaise
- 1 teaspoon Dijon mustard
- 2 tablespoons white wine or white wine vinegar
- 1 teaspoon freshly ground black pepper
- 6 tablespoons minced fresh dill
- 1 cup minced red onion (1 onion)
- 3 cups minced celery (6 stalks)
