Roast Chicken with Root Vegetables

Recipe from Thomas Keller
- One 4 to 4 1/2 lb chicken
- Kosher salt and freshly ground black pepper
- 6 garlic cloves, smashed and peeled
- 6 thyme sprigs
- 2 large leeks
- 3 tennis-ball-sized rutabagas
- 2 tennis-ball-sized turnips
- 4 medium carrots, peeled, trimmed, and cut in half
- 1 small yellow onion, trimed, leaving root end intact, and cut into quarters
- 8 small (golf-ball-sized) red-skinned potatoes or fingerlings
- 1/3 cup canola oil
- 4 tablespoons (2 ounces) unsalted butter, at room temperature
English Toffee

In heavy saucepan, combine butter, sugar, water and salt
- 3 sticks of butter
- 1 1/2 c. sugar
- 1/3 c. water
- 3/4 tsp salt
- 1 c. chocolate chips
- 1 c. pecans, coarsely broken
Beer Braised Beef with Onions

Heat oven to 350. In a dutch oven or large skillet cook onions in oil for 25 minutes until caramelized
- 3 lbs onions
- 5 lb chuck roast tied
- 2 T vegetable oil
- 2 Bay leaves
- 2 12 oz cans of pilsner or budweiser beer
- 2 T red wine vinegar.
- Salt and pepper
Upside Down Apple Coffee Cake

Spread one cup of apples in a 9" glass pie plate sprayed with non-stick vegetable spray
- 1 1/2 c. apples, peeled, chpd & divided
- 12.4 oz tube cinnamon rolls
- 1/2 c. pecan pieces
- 2 T. butter
- 1/3 c. brown sugar
- 2 T. corn syrup
Bahama Salad

Make the dressing ahead of time and refrigerate for at least 2 hours
- Dressing:
- 1 lb romaine lettuce, broken into bite size pieces
- 1 tomato, cut up
- 3 artichoke hearts, quartered
- 1 avocado, diced
- 1 hard boiled egg, cut up
- 1 garlic clove, crushed
- 1/2 tsp celery salt
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 tsp strong mustard
- 1/4 c. red wine vinegar
- 1/2 cup salad oil
Buffalo Chicken Mac & Cheese

Preheat oven to 350 and butter a 9 x 13 dish
- 7 T unsalted butter
- kosher salt
- 1 lb elbow macaroni
- 1 sm onion,finely chpd
- 2 stalks celery, finely chpd
- 3 c rotisserie chicken, shredded
- 2 cloves garlic, minced
- 3/4 c Frank's Red Hot
- 2 T. flour
- 2 tsp dry mustard
- 2 1/2 c half and half
- 1 lb sharp cheddar, cut into 1" cubes
- 8 oz pepper jack, shredded
- 2/3 c sour cream
- 1 c Panko breadcrumbs
- 1/2 c. crumbled blue cheese
- 2 T. fresh parsley, chpd
Shrimp Boil - Old Bay

Bring water, beer, Old Bay and salt to boil in 12 quart stockpot on high heat
- 4 quarts water
- 1 can beer (optional)
- 1/2 c. Old Bay seasoning
- 2 T. salt
- 12 med red potatoes, quartered
- 3 onions, cut into wedges
- 3 lbs smoked sausage, cut into 2" pieces
- 8 ears of fresh corn, cut into 3" pieces
- 4 pounds of unpeeled jumbo shrimp (21-25 count)
- Melted butter and french bread

- 1 cup sugar, plus extra for sprinkling
- 1 tsp pure vanilla extract
- 3 1/2 cups all-purpose flour

- 1/2 c. warm water
- 1 tsp. sugar
- 1 1/2 c. hot milk
- 1/2 c. sugar
- 2/3 stick butter
