Not So Sweet Tzimmes

Tweaking my old original tzimmes for a not so sweet version, suitable for the autoimmune protocol
- 2 TB extra virgin olive oil {or coconut oil}
- 2 sweet potatoes, chopped
- 1/2 yellow onion, chopped
- 1 lemon, juiced and zested
- 1/2 cup dried tart cherries
- 6 or 7 dried Calimyrna figs, sliced
- 1 tsp cinnamon
- 1 one-inch chunk fresh ginger, peeled and grated
- 1/2 tsp Real salt or Himalayan sea salt

Strawberry Rhubarb Ice "Cream"

This strawberry rhubarb ice cream is perfect for sunny days
- 2 cans organic full fat coconut milk {I like Native Forest brand for ice cream making}
- 1 cup chilled organic strawberry rhubarb compote {equal parts chopped strawberries and rhubarb cooked down, no sugars added}
- 1/2 a small organic banana, mashed – more or less depending on how sweet you want it.
- 1/4 tsp sea salt
Grapefruit Avocado Salad

- 1 organic grapefruit
- 1 organic avocado
- sprinkle of organic dried mint
- sprinkle of Himalayan sea salt
Kofte Bison Kebabs

These Kofte Bison Kebabs are ridiculously simple to make, yet they're sure to impress!
- AIP Stage 1 reintroduction options try adding:
- 1 lb ground bison
- 1/4 organic red onion, diced
- 3 organic garlic cloves, pressed or grated
- 1/2 cup organic Italian parsley, chopped
- 2 tsp organic dried mint {or 2 TB fresh, chopped}
- 1/2 tsp Saigon cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp Himalayan sea salt or Real Salt
- Zest of organic lemon
- Organic extra virgin olive oil, for brushing
- 1 tsp ground cumin and/or 1 tsp ground coriander
Autumn Skillet

You cannot go wrong with the combination of fall flavors and bacon!
- 2 slices bacon - I used our Paleo homesmoked bacon http://www.keyingredient.com/recipes/590336688/applewood-smoked-paleo-bacon/
- 1/2 organic butternut squash, peeled and cubed
- 1/2 an organic white onion, chopped
- 2 organic apples, peeled and cubed

- 1 stalk of organic celery, sliced
- Himalayan sea salt, to taste
- you could also add a bit of cinnamon and/or sage - depending on your main dish's seasonings.

- 1 small organic kabocha squash; peeled, seeds removed, and chopped
- 1 lb organic mushrooms, sliced
- 1-2 TB organic extra virgin olive oil
- 1 tsp organic rosemary
- 1/2 tsp organic thyme
- 2 cups leftover turkey breast, chopped
- Real salt or Himalayan sea salt, to taste
Balsamic-Roasted Brussels with Prosciutto and Pomegranate

- 1.5 lbs organic Brussels sprouts, ends trimmed and sliced in half
- 3 oz prosciutto, torn into squares

- 2 good drizzles of balsamic vinegar
