Ingredients

  • 1

    lb ground bison

  • 1/4

    organic red onion, diced

  • 3

    organic garlic cloves, pressed or grated

  • 1/2

    cup organic Italian parsley, chopped

  • 2

    tsp organic dried mint {or 2 TB fresh, chopped}

  • 1/2

    tsp Saigon cinnamon

  • 1/2

    tsp ground ginger

  • 1/2

    tsp Himalayan sea salt or Real Salt

  • Zest of organic lemon

  • Organic extra virgin olive oil, for brushing

  • AIP Stage 1 reintroduction options try adding:

  • 1

    tsp ground cumin and/or 1 tsp ground coriander

Directions

If using wooden skewers, soak them in water ahead of time, per their instructions. I use metal skewers. Preheat oven to 350 or broil, your choice. In a large bowl, mix together ingredients, careful to not overwork the bison. Set aside 10 minutes at room temperature to let flavors combine. Portion meat mixture into fourths {I use my hand to even out the mixture and score a crosshatch over the top to divide equally}. Gently press a portion of bison mixture onto each skewer. Alternatively, you can shape the meat first and thread the skewer through and reshape as needed. Brush each with a little olive oil and place on a baking rack on a sheet pan. Broil: Put under broiler for about 7 minutes, flip and continue cooking 8-10 minutes. Bake: Bake in a preheated 350 degree oven for 35-40 minutes.
