Apple Butternut "Curry" Soup

I revamped one of my favorite soups to be autoimmune protocol paleo compliant - this Apple Butternut "Curry" Soup i
- 2 tablespoons fat of choice {lard, bacon fat, or coconut oil}
- 2 cups chopped organic onions
- 1 tablespoon organic turmeric powder
- 1 tablespoon freshly grated organic ginger
- 2 pounds organic butternut squash cut into 1-inch cubes {about 8 cups cubes}
- 1/2 pound organic apples, peeled, cored and chopped
- 5 cups homemade organic bone broth {I used chicken}
- 1 teaspoon Himalayan sea salt
- Organic green onions or apple, garnish
Garlic Sauerkraut

Garlic Sauerkraut has become a staple in our home! It is easy to make; waiting is the hardest part
- 2 small organic cabbages, unwashed {the natural bacteria is good for fermentation process}, outer leaves and core removed, sliced thin (save one or two nicer outer leaves, too}
- 4 organic garlic cloves, grated or pressed
- 1 scant TB sea salt {13 grams}
- Supplemental brine, if needed
Red Kuri and Apple Soup with Leftover Turkey

Simple ingredients, this soup is flavorful and hearty
- 1 organic red kuri squash; peeled, seeds removed, and chopped {about four cups}
- 2 organic red delicious apples, cored and chopped {peeling is optional}
- 1 TB organic extra virgin olive oil
- 1 quart bone broth
- 1 tsp organic powdered ginger {or 1 TB fresh grated}
- 1 tsp organic powdered turmeric {or 1 TB fresh grated}
- 1/2 tsp organic garlic powder
- 1/2 tsp fish sauce
- 2 cups chopped or shredded leftover turkey
- Real salt or Himalayan sea salt, to taste

Nutty Porridge

- Pre-soak:
- 2 cups organic nuts {almonds or walnuts or a mix!}
- Pinch of salt
- Water
- Morning:
- Soaked nuts, rinsed well {until water runs clear}

- 1 1/4 cups to 1 1/2 cups organic coconut milk {full fat} or just use water
- 1/2 tsp organic cinnamon
- 1/2 tsp organic vanilla extract
- Toppings of choice

AIP Brownies

These AIP Brownies are cake-like and delicious! Using tigernuts and lard makes them a coconut-free treat
- gelatin eggs:
- 125 grams organic tigernut flour
- 75 grams organic arrowroot starch
- 40 grams organic carob powder
- 1 tsp baking soda
- 1 tsp organic cinnamon
- 1/2 tsp sea salt
- 130 grams pure lard plus more for greasing pan
- 1/3 cup organic grade B maple syrup
- 2 medium organic zucchini, grated {about 350 grams after ends are removed}
- 2 "gelatin eggs" {see below}
- optional: 200 grams organic tigernuts, soaked overnight or boiled for 15 minutes
- optional ingredient: 1 tsp alcohol-free vanilla {or use vanilla with alcohol since these are baked}
- 2 tablespoons grassfed gelatin {Great Lakes red can}
- 2 tablespoons room-temp water
- 4 tablespoons boiling water
