- 4 hardboiled organic eggs, peeled
- 1 lb. grass fed ground beef
- 4 strips of bacon
- Seasoning of your choice {i.e. garlic, onion, or an organic no-salt seasoning blend}
- Salt
- Organic olive oil
Fish Taco Salad with Garlic Lime Vinaigrette & Mango Salsa

This Fish Taco Salad hit the spot! Made with those who avoid nightshades in mind, but received a collective thumbs
- Fish:
- 1 lb wild-caught Alaskan cod fillet
- 1 clove organic garlic, pressed
- Juice of half an organic lime {to squeeze on after it is done cooking, save the zest for the salad}
- Salad:
- 4 large handfuls organic spring mix
- Small handful organic cilantro, chopped
- 1 large organic carrot, peeled and julienned
- 2 TB organic red onion, diced
- Zest of half an organic lime {the zest reserved from fish}
- 1 organic avocado, sliced - to garnish
- Garlic Lime Vinaigrette:
- Zest and juice of one organic lime
- 1 organic garlic clove, pressed
- 1 TB raw honey
- 1/4 cup organic EVOO
- Himalayan sea salt, to taste
- Mango Salsa:
- 1 organic mango, peeled and chopped
- Zest and juice of half an organic lime
- 1/4 cup organic red onion, diced
- 1 tsp organic ginger, grated
- Small handful organic cilantro, chopped
- Himalayan sea salt

- 4 handfuls organic baby spinach, washed and spun
- 1 organic shallot, sliced thin lengthwise
- 1 organic navel orange, peeled and chopped

AIP Beef Tacos

These AIP Beef Tacos are full of flavor and will leave you satisfied
- Taco Filling:
- 1 tsp pure pork lard
- 1 organic onion, chopped
- 1 lb ground beef {I've also made this same recipe with chopped pork loin chops - amazing}
- 1 organic carrot, shredded
- 1/2 cup organic black olives, cut in half lengthwise
- 1 1/2 tsp organic oregano
- 1/2 tsp organic garlic
- 1/2 tsp organic turmeric
- 1 tsp Maldon sea salt
- 1-2 tsp tamarind concentrate
- 1/2 organic lime, to squeeze over when finished
- Guacamole:
- 2 organic avocados, pit removed and fruit scooped out
- 1/4 organic red onion, diced
- 1 lime, zested and juiced
- Maldon sea salt, to taste
- Plantain tortillas {2 tortillas per person}, romaine leaves {2 leaves per person}, or endive leaves {4 leaves per person} - depending on your preference
- 1/4 of a head organic green cabbage, sliced

- 1 organic lemon, zested and juiced
- 1 pinch sea salt
- 1/2-inch section of ginger root, peeled and grated
- Avocado oil or olive oil, to your preference
Steak Salad with Tarragon Vinaigrette

Tarragon works beautifully in this steak salad with mushrooms and fresh greens
- 1 lb. grass fed steak, seasoned well with Real salt
- 1 TB fat of choice {lard, tallow, or rendered bacon fat work especially well}
- 1/2 cup organic extra virgin olive oil
- 3 TB balsamic vinegar
- 2 TB organic fresh tarragon, minced {or 2 tsp dried}
- 1/4 tsp organic garlic powder
- 1/2 tsp Real salt or Himalayan sea salt
- 4 handfuls greens {I used a combination of spinach, arugula, and red leaf lettuce}
- 4 oz. organic button mushrooms, cleaned and sliced {about three}
- 1 small handful organic Italian parsley, chopped

- 3 lb piece local pasture raised, hormone free, steroid free and GM feed free raw pork belly {skin removed}

Lemon Lavender Plantain Pancakes are a good balance in sweetness, mellow floral, and vibrant citrus flavors
- 1 medium organic* plantain {yellow/brown spotted is what I used so it isn't SO sweet}, peeled and sliced – about 6 oz.
- Zest of one organic lemon
- 2 tsp dried lavender buds
- Organic coconut oil for cooking
- Note: * If you cannot find organic plantains, ask your local Whole Foods Market or co-op produce manager to bring some in. You might be surprised with how willing they are to stock it, or even order a case and hold it for you!
