Beef Brisket

Brisket, naturally, is a tough cut of meat
- 4 lb. kosher beef brisket
- 1 organic white onion
- 4 stalks organic celery, chopped
- 4 gloves organic garlic, roughly chopped
- 1/2 tsp. thyme
- 1/2 tsp. rosemary
- 1/2 tsp. taragon
- 1/2 tsp. paprika
- S&P {for veggies only, I find I don't need to add salt to kosher meat}
Lemon and Herb Kebabs

Fire up the grill! These veggie kebabs are incredibly satisfying and light on summer nights
- Marinade:
- Zest and juice from one organic lemon
- 1/2 tsp fresh cracked organic chipotle-black pepper
- 1/2 tsp kosher salt
- 3 organic garlic cloves, grated
- 1/4 cup organic oregano, chopped
- 3 large organic basil leaves, chopped
- 1/2 cup extra virgin olive oil
- Kebabs:
- 2 organic bell peppers, 1-2" pieces
- 1 large sweet onion, 1-2" pieces
- 1 lb. organic zucchini, 1" thick slices
- 1 pint organic cherry tomatoes, whole
- 1/2-1 lb. organic mushrooms, whole
- Optional additions eggplant cut into 1" cubes
Kofte Lamb Kebabs

These Kofte Lamb Kebabs are simple to make, yet they're sure to impress!
- 1 lb ground lamb, room temperature
- 2 TB organic red onions, diced
- 3 organic garlic cloves, grated or pressed
- 2 TB organic Italian parsley, chopped
- 1 small bunch organic thyme, leaves removed and lightly chopped
- Zest of 1 organic lemon
- Real Salt or Himalayan sea salt
Roasted Sweet Potatoes with Pomegranate Molasses

- 1 organic avocado, chopped
- Arils from one organic pomegranate
- 2 TB organic red onion, diced
- 1 small handful organic cilantro, diced
- Real salt or Himalayan sea salt
Radish Mango Salad

The crisp bite of radish is balanced with the sweetness of mango
- 1/2 organic lime, zested and juice
- 2 TB raw organic apple cider vinegar
- 3 TB organic extra virgin olive oil
- Sea salt, to taste
- 1 organic mango, peeled and sliced
- 8 organic radishes, thinly sliced
- 1 organic English cucumber, thinly sliced
- 4 ounces organic spinach
- 8-10 organic mint leaves, chiffonade
- Optional: Protein of choice - I like Wild Planet's wild-caught Albacore tuna, though chicken would also be a good addition.
Ginger Peach Sorbet

- 3 lbs peaches, pitted and halved {about 9 depending on size}
- 2-inch chunk of organic ginger, peeled and grated
- 1/3 cup honey; raw and local preferred
- 1 cup filtered water
- Zest of one organic orange
Cinnamon Bacon

- 3 lb piece local pasture raised, hormone free, steroid free and GM feed free raw pork belly {skin removed}
- 1/4 cup sea salt - I've had success with fine sea salt and coarse sea salt.
- 1 TB organic ground cinnamon
- 1 tsp organic ground cloves
- 1 tsp organic garlic powder
