- 2 sticks butter
- 2 cups all purpose flour
- 1 cup confectioner's sugar
- pinch of salt
- Filling:
- 4 large eggs
- 2 c gran sugar
- 6 tbs flour
- 6 tbs lemon juice (2 lemons)

Keto lasagna
- 1 pkg riced cauliflower
- 1/2 lb gr beef
- 1/2 tube breakfast sausage
- 3 tbs tomato paste
- 1 can crush tomatoes
- 1 cup ricotta
- fresh basil
- parmesan and mozzarella or italina blend cheese
Goat Cheese Risotto

In a medium saucepan, bring chicken stock to boil and then simmer and keep warm
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 1 large shallot, diced
- 2 garlic cloves, minced
- 1 cup Arborio rice
- 3 cups low-sodium chicken stock
- 8 ounces goat cheese
- 1 cup grated Parmesan cheese
- Kosher salt to taste

- 1/3 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons honey
- 2 tablespoons sesame oil
- 2 teaspoons minced garlic
- 1 tablespoon grated fresh ginger root
- 1 tablespoon chopped green onion or shallot
- 1 tablespoon raw sesame seeds
- 1/2 teaspoon ground pepper

With an electric mixer, beat butter, sugar, vanilla, and salt until smooth
- FOR THE SHORTBREAD
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups all-purpose flour (spooned and leveled), plus more for rolling
- Mix in grated zest of 2 oranges and 1/2 cup dried cranberries (for variation)

- 1 small green bell pepper, cut into thin strips
- 2 cloves garlic, minced
- 3 cups chicken broth

- 1 cup quick-cooking grits
- 3 cups shredded Monterey Jack cheese

- 2/3 cup extra virgin olive oil
- 1/4 cup sugar, I use Spenda
- 3 tablespoons water
- 2 tablespoons white wine vinegar
- 4 teaspoons minced garlic
- 1 tablespoon Grey Poupon Dijon Mustard
- 2 teaspoons lime juice

Broccoli Rice Casserole

- 2 10 oz pkg frozen chopped broccoli
- 2 cans condensed cream of mushroom soup
- 2 cups instant rice
- 3/4 c. minced/chopped onion
- 1/4 c. butter
- 1 16 oz jar process cheese sauce
- chopped water chestnuts (opt)
- salt & pepper
