Spicy Pimento Cheese Dip

Heat oven to 350 and grease square pan
- small vidalia onion
- 1 pkg softened cream cheese
- 1/2 c. mayo
- 2 c shredded sharp cheddar
- 2 c. shredded jack cheese (jalapeno)
- 1 jar pimentos
- 1 tbsp hot pepper sauce
Cranberry Creamcheese Rollup

n a small bowl, combine the cream cheese, feta cheese and onions
- 1 pkg (8 ounces) whipped cream cheese, softened
- 1 cup (8 ounces) crumbled feta cheese
- 1/4 cup chopped green onions
- 1 package (6 ounces) dried cranberries
- 4 flour tortillas (10 inches)
Whip Cream Cream Cheese Frosting

Beat the cheese, sugar and vanilla until smooth and fluffy
- Ms. Humble's Whipped Cream Cheese Frosting
- Can and should be halved for more modest, non-crazy pregnant woman portions
- 16 oz cream cheese, room temperature
- 1 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1 cup heavy cream, cold. Higher the fat content, the better (I'm using 40% Ultra)
Smothered Chicken

Preheat the oven to 350 degrees
- FOR THE CREAMED SPINACH:
- 1 large bag of spinach leaves
- 4 ounces cream cheese
- 1/4 C shredded parmesan cheese
- 2 cloves garlic, minced
- 3 T red onion, minced
- 2 T olive oil
- Salt and pepper to taste
- FOR THE SAUTEED MUSHROOMS:
- 8 ounce package of mushrooms, sliced
- 1/2 stick butter
- 2 T olive oil
- 1/2 C white wine
- 2 cloves garlic, minced
- Salt and pepper to taste
- FOR THE CHICKEN:
- 4-5 boneless chicken breasts
- 8-10 slices Mozzarella cheese, cut into 1/8 inch slices
- 1 T garlic powder
- 1 T seasoned salt, like Lawry's
- 1 T pepper
Fish Tacos with Spicey Mexican Coleslaw Mix

Grill your fish or shrimp and prepare mexi-slaw as directed
- Grilled Tuna/shrimp
- pkg small flour tortillas
- coleslaw mix
- chopped tomoatoes/avocados/cilantro
- Mexican Sauce: Use to top on tacos
- Mayonnaise, fresh lime juice, fajita seasoning and cilantro. Mix in coleslaw mixture and top off on fish taco.
Moist Cornbread

- Box Mix Cornbread
- 1 pkg frozen creamed corn or 1 can creamed corn (blended)
- 1 sm. can green chilis
- 1/2 jalapeno, minced
- 1 c. grated cheddar
Japanese Seafood Sauce

- peach/mango chutney or perserve
- paprika
- honey
- ketchup rice vinegar
Roasted Red Pepper Sauce

Place garlic and pine nuts in a food processor
- 3 cloves garlic
- 1/3 • 1/3 cup pine nuts
- 1/3 • 1/3 cup grated Parmesan cheese
- 1 • 1 cup roasted red bell pepper (fresh or jarred)
- 1 • 1 cup basil leaves
- 1/2 • 1/2 tsp. salt
- 1/4 • 1/4 tsp. pepper
- 1/3 • 1/3 cup extra virgin olive oil
- 1 • 1 lb. penne pasta
- 1/4 • 1/4 cup heavy cream, optional
