- 3 slices white sandwich bread
- 1/3 cup whole milk
- 1 1/2 pounds ground beef chuck
- 1/2 pound ground pork
- 1/2 medium onion, grated
- 2 garlic cloves, minced
- 1 large egg
- 1/2 cup ketchup
- Coarse salt and ground pepper

- Red Pepper Aioli: In a small bowl, mix 1/3 cup mayonnaise, 1/4 cup chopped drained canned roasted red peppers, 1 tablespoon minced fresh chives, 2 teaspoons lemon juice, and 1 teaspoon minced garlic.
Chicken Spaghetti Monterray

Cook spaghetti according to package directions
- 4 ounces spaghetti, broken into 2-inch pieces
- 1 egg
- 1 cup (8 ounces) sour cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 2 cups (8 ounces) shredded Monterey Jack cheese
- 1 package (10 ounces) frozen chopped spinach, thawed and drained
- 1 can (2.8 ounces) french-fried onions, divided
Roasted Vege Orzo Salad

Preheat the oven to 425 degrees F
- For the dressing:
- 1 small eggplant, peeled and 3/4-inch diced
- 1 red bell pepper, 1-inch diced
- 1 yellow bell pepper, 1-inch diced
- 1 red onion, peeled and 1-inch diced
- 2 garlic cloves, minced
- 1/3 cup good olive oil
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 pound orzo or rice-shaped pasta
- 1/3 cup freshly squeezed lemon juice (2 lemons)
- 1/3 cup good olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- To assemble:
- 4 scallions, minced (white and green parts)
- 1/4 cup pignolis (pine nuts), toasted
- 3/4 pound good feta, 1/2-inch diced (not crumbled)
- 15 fresh basil leaves, cut into julienne

Mix first ingredients. Add crab meat then corn meal
- Sauce:
- 1 lb lump crab meat
- 1 egg beaten
- 1/2 tsp worcestershire
- 1 TBS Dijon mustard
- 1/2 tsp lemon juice
- 3 TBS mayo
- 1/2 c. corn meal
- 1/2 c. mayo
- a sm. jar roasted red peppers (drained)
- 1/2 tsp garlic minced
- 1/2 tsp curry powder
- *Puree above until smooth
Pioneer Woman's Lasagna

To assemble: Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary
- 1-1/2 pound Ground Beef
- 1 pound Hot Breakfast Sausage
- 2 cloves Garlic, Minced
- 2 cans (14.5 Ounce) Whole Tomatoes
- 2 cans (6 Ounce) Tomato Paste
- 2 Tablespoons Dried Parsley
- 2 Tablespoons Dried Basil
- 1 teaspoon Salt
- 3 cups Lowfat Cottage Cheese
- 2 whole Beaten Eggs
- 1/2 cups Grated (not Shredded) Parmesan Cheese
- 2 Tablespoons Dried Parsley
- 1 teaspoon Salt
- 1 pound Sliced Mozzarella Cheese
- 1 package (10 Ounce) Lasagna Noodles
- (add 1/2 Teaspoon Salt And 1 Tablespoon Olive Oil To Pasta Water)

- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 2 tsp. ground cinnamon

- 1 c. vegetable oil
- 3 lg. eggs
- 1 tsp. vanilla extract
- 2 c. shredded carrots
- 1 c. flaked coconut
- 1 can crushed pineapple
- chopped pecans (opt)
