- 1/2 cup chopped pecans
Spicey Cream Cheese Tortilla Roll-Ups

- 1 Pkg Tortillas
- 1 8 oz cream cheese (softened)
- 1 sm. can chopped green chilis
- 1 sm. can chopped black olives
- 1 sm. jar roasted red pepper (drain and pat dry)
- Leaf spinach (opt)
Kay's Pecan Pie

- 1 stick butter
- 1 3/4 c. sugar
- 1/4 dark karo syrup
- 3 eggs beaten
- 1 pie crust
- 1 tsp vanilla
- 1/2 tsp salt
- 1 c. chopped pecans
- 1 c. whole or half pecans

Basic Roux (for shrimp and grits & Gumbo

Saute veges and stir in oil and flour for roux for shrimp & grits etc
- 1-3 pieces bacon cut up and sauteed
- 1/2 c. oil
- 1/2 c. all purpose flour
- 2 cans chx broth or one box
- garlic
- mixed peppers
- onion & garlic
- -chopped green onion (for shrimp and grits)
- -crumble cooked bacon and top on shrimp & grits
- *For Gumbo, add 1 can diced tomatoes with juice, bay leaf
Hollandaise Sauce

Whisk egg yolks on low heat
- 2 egg yolks
- 1 stick butter
- 1 tbs lemon juice
- 1 tsp water
- salt & pepper
- ground ginger (opt)
Texas Caviar

Chop and combine all ingrediants and serve with tortilla chips
- 1 15 oz can black-eyed peas w/jalapenos
- (2) 10 oz. cans rotelle tomatoes w/peppers (drained)
- 1-2 avocados
- 1 gr. bell pepper-diced
- 1 Tbs lime juice
- 1/4 c. zesty italian dressing
- 1/2 bunch cilantro chopped

- Creamy Penne with Blue Cheese, Arugula and Toasted Walnuts:
- (Adapted from Fine Cooking)
- 1/2 1/2 1/2 pound penne
- 4 4 4 cups arugula
- 1 1 1 Tbs. butter
- 1 1 1 cup reduced-fat milk
- 1/2 1/2 1/2 cup crumble blue cheese
- 1/2 1/2 1/2 cup walnuts, coarsely chopped and toasted
- coarse salt and freshly ground pepper
Kayes Vinaigrette Dressings

Prepare as directed
- 2 c. red wine vinegar
- 1 c. white vinegar
- 2 c. dried cherries/cranberries (seep for 24 hrs)
- 1/2 c. cherry vinegar (from above prepared)
- 1 c. canola oil
- 1/2 c. maple syrup
- 1/8 tsp dijon
- fresh chopped basil
- salt and pepper to taste
- *Cut recipe in half.
