TUSCAN BAKED CHICKEN AND BEANS

1. Preheat oven to 350 2
- 1 (3 1/2 pound) roasting chicken
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 slices center-cut bacon
- 1 cup chopped onion
- 1/8 teaspoon kosher salt
- 2 cups packed torn spinach
- 1/2 teaspoon chopped fresh rosemary
- 2 (16 ounce) cans cannellini or other white beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
QUICHE LORRAINE

This was perfect for brunch
- 1 cup Gold Medal all-purpose flour
- 1/4 teaspoon salt
- 1/3 cup plus 1 tablespoon shortening
- 2 to 3 tablespoons cold water
- 8 slices bacon, crisply cooked, crumbled (1/2 cup)
- 1 cup shredded Swiss or Cheddar cheese (4 oz)
- 1/3 cup finely chopped onion (saute onion in bacon drippings until translucent)
- 4 large whipping cream or half-half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon ground red pepper (cayenne)
PORK MEDALLIONS IN MUSHROOM MARSALA SAUCE

This is a wonderful, decadent pork dish
- 2 lbs pork tenderloin (about 2 tenderloins)
- Kosher salt and freshly ground black pepper
- 3 Tablespoons extra virgin olive oil
- 3 tablespoons unsalted butter
- 2 medium shallots, finely diced
- 12 oz cremini mushrooms, thinly sliced
- 1 tablespoon all-purpose flour
- 1/2 cup dry marsala wine
- 1 cup homemade or law salt chicken broth
- 3 tablespoons heavy cream
- 1/4 cup chopped fresh flat leaf parsley
HERBED COUSCOUS

Star with a basic side dish
- 1 tablespoos olive oil
- 1/4 cup finely chopped shallots
- 1 cup uncooked couscous
- 1 cup + 2 tablespoons fat free lower sodium chicken broth
- 1/4 salt
- 1 tablespoon chopped fresh flat leaf parsley
- 1 teaspoon chopped fresh thyme
PERSIMMON BREAD II

This bread is a cross between gingerbread and pumpkin
- 1 cup persimmon pulp
- 2 teaspoons baking soda
- 3 cups white sugar
- 1 cup vegetable oil
- 4 eggs
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/2 teaspoons salt
- 2/3 cup water
- 3 cups all-purpose flour
- 1 cup (or more) chopped walnuts
HOMEMADE TARTARE SAUCE

Great homemade flavor. Serve with fish and chips
- 1 cup mayonnaise
- 2 tablespoons finely chopped sweet pickles, plus 2 teaspoons juice
- 1 tablespoon drained capers, minced
- 2 teaspoons lemon juice
- 1 teaspoon minced shallot
- 1/2 teaspoon Worcestershire sauce
- salt and pepper
SPICY PORK WITH PEANUTS

Outstanding Chinese flavors
- 1/4 cup peanuts, (I like roasted Virginia peanuts, any will work).
- 3 tablespoons peanut oil
- 4 whole dried chile peppers
- 4 scallions, thinly sliced
- SAUCE
- 1 tablespoon chile paste with garlic
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 1/2 tablespoons chinese rice wine or dry sherry
- 1 tablespoon red wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch, mixed with
- 1 tablespoon chicken broth
- 8 ounces boneless pork, cubed (I'll bet chicken would work too)
SOY-GLAZED SALMON WITH CUCUMBER-AVOCADO SALAD

This salmon is easy to prepare
- 1 tablespoon honey
- 2 1/2 teaspoons low-sodium soy sauce
- 1/2 teaspoon cornstarch
- 4 6-ounce skinless center cut salmon fillets
- Kosher salt
- 1 teaspoon rice vinegar (not seasoned)
- 1 tablespoon mayonnaise
- 1 medium English cucumber, quartered lengthwise and sliced
- 3 scallions, thinly sliced
- 1 avocado, halved, seeded and chopped
- jarred pickled ginger, for serving (optional)
BAKED PENNE WITH THREE CHEESE

- 1 . 6 tablespoons unsalted butter
- 2 . 6 tablespoons all-purpose flour
- 3 . 4 cups milk
- 4 . 1 1/2 cups Fontina cheese, shredded
- 5 . 1/2 pound Gorgonzola cheese, in pieces
- 6 . 1 cup Parmesan cheese, grated
- 7 . salt and freshly ground pepper
- 8 . 3/4 pound uncooked penne pasta
- 9 . 1/2 cup fresh bread crumbs
ASIAN CHICKEN NOODLE SOUP

The pasta will still have a chewy bite when the chicken is ready, but it continures to cook while the soup stands
- 1 tablespoon vegetable oil
- 1 tablespoon bottled minced garlic (I prefer minced fresh garlic)
- 1 tablespoon bottled grated ginger
- 2 stalks fresh lemon grass, peeled
- 2 cups water
- 2 (14-ounce) cans fat-free, less-sodium chicken broth
- 1 pound chicken breast tenders, cut into bite-sized pieces
- 4 ounces uncooked angel hair pasta
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
- 2 green onions, thinly sliced
- 1 red chili pepper, finely chopped
