ANGEL HAIR PASTA WITH GARLIC AND CLAM CREAM SAUCE

Wonderfully rich and comforting
- 1 1/2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 3 6 1/2 oz cans chopped clams, drained, liquid reserved
- 1 teaspoon fresh oregano (or 1/2 teaspoon dried)
- 1/4 teaspoon dried red chile flakes
- 2/3 cup reserved clam juice
- 8 ounces dried angel hair pasta , cooked and drained
- 1/4 cup freshly grated parmesan
- 1/4 cup fresh flat leaf parsley, chopped
- 1/2 cup heavy cream
COBB SALAD

Great served on a warm summer evening
- 1/4 cup red wine vinegar
- 2 teaspoons salt
- 1 teaspoon lemon juice
- 1 small garlic clove, minced
- 3/4 teaspoon coarsely ground pepper
- 3/4 teaspoon Worcestershire sauce
- 1/4 teaspoon sugar
- 1/4 teaspoon ground mustard
- 3/4 cup canola oil
- 1/4 cup olive oil
- SALAD
- 6 1/2 cups torn Romaine lettuce
- 2 1/2 cups torn curly endive
- 1 bunch watercress (4 oz) trimmed, divided
- 2 cups cooked chicken breast, chopped
- 2 medium tomatoes, seeded and chopped
- 1 medium avacado, peeled and chopped
- 3 hard cooked eggs, chopped
- 1/2 cup crumbled blue or Roquefort cheese
- 6 slices bacon strips, cooked and crumbled
- 2 tablespoons minced fresh chives
FRESH SPINACH SALAD

Remove stems from spinach
- 1 pound spinach
- 3 eggs -- hard-cooked
- 6 radishes
- 1/2 pound bacon -- diced
- 3/4 cup vegetable oil
- 1/4 cup red wine vinegar
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/2 teaspoon pepper -- crushed
- 1/2 clove garlic -- crushed
Smoked Salmon and Leek Chowder

Melt the butter in a 4-quart saucepan over medium heat
- 3 Tbs. unsalted butter
- 2 medium leeks, white and light green parts only, halved lengthwise, thinly sliced, and rinsed well (about 1 cup)
- 1 large rib celery, thinly sliced (about 1/3 cup)
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 2 8-oz. bottles clam juice
- 3 small red potatoes, cut into 1/2-inch dice (about 2-1/2 cups)
- 1 bay leaf
- 6 oz. hot-smoked salmon (see Test Kitchen piece on hot vs. cold smoked salmon), skin and bones removed, flaked into bite-size pieces (about 1-1/4 cups)
- 1/2 cup heavy cream
- 2 Tbs. chopped fresh dill
- 1 Tbs. fresh lemon juice
- Kosher salt and freshly ground black pepper
WARM DIJON POTATO SALAD

Nice side dish, fast and easy
- 5 medium red potatoes
- 1/4 cup reduced-fat mayonnaise
- 1 tablespoon grated Parmesan cheese
- 1 green onion
- 2 teaspoons cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Bacon-Cheese Quiche

I can't wait to make this for brunch
- All-purpose flour, for rolling
- 1 homemade or store-bought single-crust pie dough
- 1 tablespoon unsalted butter
- 2 cups medium diced yellow onion (from 1 large onion)
- Coarse salt and ground pepper
- 6 large eggs
- 3/4 cup heavy cream
- 3/4 pound bacon, cooked and crumbled
- 1 cup shredded Gruyere cheese (4 ounces)
ZESTY GRILLED CHOPS

- 1/4 cup lemon juice
- 1 tablespoon brown sugar
- 1 tablespoon chili sauce
- 1/4 teaspoon garlic powder

PINEAPPLE BANANA BREAD

- 3 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup chopped nuts (walnuts, pecans or macadamia)
- 2 teaspoons vanilla
- 3 eggs, beaten
- 1 1/4 cups vegetable oil
- 2 cups mashed bananas
- 1 8 oz can of crushed pineapple (well drained)
