Chunky Tomato Basil Soup

This came from the label of Kroger's diced tomatoes
- 1 tbs olive oil
- 1 onion, chopped
- 2 ribs celery, chopped
- 1 carrot, chopped
- 2 garlic cloves, minced
- 2 (14.5 oz.) cans
- diced tomatoes, undrained
- 1 tsp. dried basil, crumbled
- 3 cups reduced sodium chicken broth
- salt and pepper, to taste
- 8 fresh basil leaves, julienned
Overnight blueberry French Toast Casserole

1. Lightly grease a 9 x 13 inch baking dish
- 12 slices day-old bread, cut into 1-inch cubes (Italian bread works best I have found)
- 2 (8oz.) packages cream cheese, cut into 1 inch cubes
- 1 cup fresh or frozen blueberries
- 12 eggs, beaten
- 2 cups milk
- 1 tsp. vanilla
- 1/3 cup maple syrup
- 1 cup sugar
- 2 TBS cornstarch
- 1 cup water
- 1 cup fresh or frozen blueberries
- 1 TBS butter
French Toast Casserole

1. In a large bowl, whisk together the eggs, milk, heavy whipping cream, vanilla, and ground cinnamon and sugar
- For the Cream Cheese Drizzle:
- 1 bread loaf cut into 1-inch squares
- 7 large eggs
- 1 1/2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup heavy whipping cream
- 1/2 tsp vanilla extract
- 1 tsp. ground cinnamon
- 2/3 cup sliced almonds
- 16 oz. fresh berries
- 2 tsp. powdered sugar for dusting, optional
- 2 oz. cream cheese room temp.
- 1/4 cup powdered sugar
- 1/4 tsp. vanilla extract
- 2 1/2 1/2 TBS whole milk
BLT Pasta Salad

1. In a large pot of salted boiling water, cook farfalle according to package directions until al dente
- 1 lb. farfalle pasta
- 6 slices bacon
- 1 1/2 cup romaine, shredded
- 2 cups multi-colored cherry tomatoes, halved
- 1 cup sour cream
- 1/2 ranch seasoning packet (about .5 oz)
- Juice of 1 lemon
- 1/3 cup chives, chopped
- Freshly ground black pepper
Hamburger Soup

Brown hamburger and drain
- 1 lb. hamburger
- 1 cup carrots
- 1 cup celery
- 1 pkg. onion soup mix
- 1 can tomato sauce
- 3 cups boiling water
- 1/4 tsp oregano
- 1/4 tsp basil
- 1 TBS soy sauce
- 1 cup cooked macaroni
- Parmesan cheese
- salt
- pepper

- 1 tsp. Italian seasoning
- 1/4 tsp garlic powder
- 2 cups (8 oz) shredded mozzarella cheese
- 1 cup (4 oz.) shredded cheddar cheese
- 1/2 cup pizza sauce
- 1/2 cup finely chopped green pepper
- 1/2 cup finely chopped sweet red pepper
- Tortilla chips or breadsticks
Mrs. Miller's Casserole

Preheat oven to 350 degrees
- 1 1/2 to 2 pounds chicken, cooked and dices into half inch cubes
- 1 4-oz can sliced water chestnuts, drained
- 1 6-oz jar sliced mushrooms, drained
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 box stuffing mix (like StoveTop)
- 2-15 oz cans chicken broth

1. Boil shell macaroni according to directions
- 16 oz. shell macaroni
- 1/2 tsp celery salt
- 1 tsp onion salt
- 1 pt. mayonnaise
- 3/4 tsp prepared mustard
- 1/4 tsp seasoning salt
- 8 oz. cheddar cheese grated
- 1 16 oz. pkg. frozen peas, rinsed with warm water
- 1 cup diced ham
Layered Chocolate Cake

In a mixing bowl, combine the first four ingredients ;mix well
- 1 German Chocolate cake mix
- 1 1/3 cups water
- 3 eggs
- 1/3 cup vegetable oil
- I pkg (3 oz) cook and serve vanilla pudding mix
- 1 tsp unflavored gelatin
- 2 cups milk
- 1 pkg 8 0z cream cheese, softened
- 1/2 cup butter, softened
- 1 tsp vanilla
- 1 1/2 cup confectioners' sugar
- 3 tbs baking cocoa
