Joe Huber Family Farm Summer Salad

Slice the cucumbers thinly and put in a bowl
- 2 cups cucumbers, sliced
- salt
- 1/2 cup diced green or red (or combination) bell peppers
- 1/2 cup chopped onions
- 1 cup tomatoes, diced
- 1/4 cup cider vinegar
- 1/4 cup sugar

"Gama" Joann's Corn Pudding Recipe

1. Preheat oven to 325 degrees
- 2 cups frozen corn (no need to thaw)
- 2 eggs
- 1/4 cup all-purpose flour
- 2 cups scalded milk, cooled
- 2 tsp. sugar or honey
- 4 TBS melted butter, divided
- 1/2 tsp. salt
Chicken Vegetable Soup

1. Melt the butter in a large pot over medium high heat
- 1 tbs butter
- 1/2 cup onion finely diced
- 2 carrots peeled, halved lengthwise and sliced
- 2 stalks carrots thinly sliced
- 2 tsp. minced garlic
- 3 cups cooked chicken shredded or cubed
- salt and pepper to taste
- 15 oz. can diced tomatoes; do not drain
- 8 oz. can tomato sauce
- 1 tsp Italian seasoning
- 6 cups chicken broth
- 1 large Russet potato peeled and cut into 1/2 inch cubes
- 1/2 cup frozen corn
- 1/2 cup diced green beans fresh or frozen
- 2 tbs. chopped fresh parsley
Shrimp Fried Rice Cups

1.Preheat the oven to 400 degrees F
- nonstick cooking spray for the pan
- 2 TBS canola oil
- 1 small red onion, diced small
- 1 medium red bell pepper, diced small
- 1 cup finely chopped carrot
- 1 cup frozen peas, thawed
- 1 cup bean sprouts
- 3 1/2 cups cooked medium-grain rice, cooled
- 1 TBS sliced scallions, plus more for garnish
- 12 peeled and deveined large shrimp, left whole, plus 8-ounces peeled and deveined large shrimp, cut into 1-inch pieces
- 2 TBS soy sauce, plus more for drizzling
- 2 TSP sesame oil
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- red pepper flakes, for sprinkling

Angel Hair Pasta with Chicken

Heat 1 tbs oil in a medium skillet over medium heat; add chicken
- 2 tbs olive oil, divided
- 2 skinless boneless chicken breast halves, but into 1-inch cubes
- 1 carrot, sliced diagonally into 1/4-inch pieces
- 1 10 oz pkg frozen broccoli florets, thawed
- 2 cloves garlic, minced
- 12 oz angel hair pasta
- 2/3 cup chicken broth
- 1 tsp dried basil
- 1/4 cup grated Parmesan cheese
Easy No-Cook Salsa Recipe

1. Place everything in the chopper of food processor and pulse a few times until combined and chunky
- 1/4 small onion
- 2 small cloves peeled garlic
- 1/2 jalapeno (seeded and membranes removed or leave in for spicy)
- 14.5 ounce can diced tomatoes (not with basal)
- handful cilantro
- juice of 1 lime
- 1/4 tsp kosher salt
Instant Pot Homestyle Chicken and Vegetables

1. Add water to the Instant Pot
- 1/2 cup water
- 1 3/4 lbs uncooked thawed boneless, skinless chicken breasts or boneless, skinless chicken thighs
- 1/2 pound baby carrots (the thicker kind) or whole peeled carrots
- 1 lb. fresh green beans
- 1 1/2 lb. red potatoes
- 1 tsp kosher salt
- 1 tsp crushed rosemary
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 TBS olive oil

Heat oven to 400 degrees Beat eggs and sour cream with whisk until well blended
- 12 large eggs
- 1/3 cup sour cream
- 1 lb pork sausage
- 1 cup sliced fresh mushrooms
- 1 onion chopped
- 2 tomatoes, chopped
- 1 pkg. (8 oz.) Kraft finely shredded triple cheddar cheese
