Zucchini Lasagna

Preheat oven to 425. Line a cookie tray with parchment paper, set aside
- 5 medium zucchini
- 1 lb lean ground meat
- 1 onion, diced
- 2 cups fresh broccoli, chopped small
- 2 cups fresh cauliflower, chopped small
- 2 cups fesh spinach, chopped
- 2 cloves garlic, minced
- sprinkle of seasoning salt salt & pepper
- 1 25 oz jar of spaghetti sauce
- 2 cups 1% cottage cheese (or fat free)
- 1/2 cup Parmesan cheese, grated
- 1 cup mozzarella cheese, shredded
Creamy Pine Nut Pasta Sauce

In a medium sauce pan melt butter, add oil
- 2 tbs butter
- 3 tbs olive oil
- 3 lg garlic cloves, minced
- 1 tsp dried basil
- 4 tbs flour
- 2 c. milk
- 2 tbs sour cream
- 2 tbs white wine
- 2-3 tbs pine nuts
Sweet Potato-Pecan Casserole

- Cooking spray
- 3 1/2 pounds sweet potatoes (about 5 medium), peeled and cut into 1-inch chunks
- 1/3 cup honey
- 1 large egg
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- Kosher salt
- 1 tablespoon packed dark brown sugar
- 1/3 cup finely chopped pecans
Veggie Topped Fish

For sauce: cut yellow squash and zucchini in half lengthwise then crosswise into slices
- 1 tbs butter
- 1 yellow summer squash
- 1 zucchini
- 1 c. sliced mushrooms
- 1/2 half sliced onion, separated
- 1/2 sliced sweet red pepper
- 1 minced garlic clove
- 1/4 tsp salt
- 1 14oz can diced tomatoes
- 1 tbs corn starch
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1 lb white fish
- 2 c. chicken broth
Pumpkin Cake with Apple Cider Glaze

Empty the contents of the boxed cake mix and pumpkin puree into a large bowl
- For the Cake:
- 1 Yellow Cake Mix
- 1 15 ounce can of pumpkin puree
- For the Glaze:
- 1-1/2 cups powdered sugar
- 3 Tablespoons apple cider
- 3/4 teaspoon pumpkin pie spice
Black Bean Salad

Drain and rinse black beans and corn
- 2 cans black beans
- 1 can corn
- 1/4 c. chopped cilantro
- 1/4 c. red onion (opt)
- 4 oz fetta cheese
Soy Simmered Turkey Legs

Prep Time: 15 minsTotal Time: 1/2 day1 In a slow cooker, combine onion, bell pepper, garlic, chili, and raisins
- 1 medium onion, finely chopped
- 1 medium red bell pepper, seeded and chopped
- 3 garlic cloves, thinly sliced
- 1 small dried hot red chili pepper
- 1/3 cup raisins
- 4 medium sized turkey drumsticks (4lbs total)
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons cornstarch, blended with
- 2 tablespoons cold water
Deviled Eggs

Place eggs in a saucepan and cover with 1 ½ inch water
- 12 eggs
- 1/2 c. mayonnaise
- 2 tsp yellow mustard
- 1/4 c. dill pickle relish
- Paprika
- Salt and pepper
Red and Green Salad

Combine the corn, peas, beans, onions, celery and radish
- 1 (15 ounce) can whole kernel corn, drained
- 1 (15 ounce) can peas, drained
- 1 (15 ounce) can kidney beans, drained
- 1/2 cup minced red onion
- 1/2 cup chopped celery
- 1/2 cup sliced radishes
- 1 cup creamy salad dressing
- 2 tablespoons milk
Cheese Enchilada

Mix Monterey jack cheese, cheddar cheese, onion, sour cream, parsley, salt and pepper; Set aside
- 2 cups monterey jack cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 onion, chopped
- 1/2 cup sour cream
- 2 tablespoons fresh parsley (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 15 ounces tomato sauce
- 2/3 cup water
- 1/3 cup green pepper, chopped
- 1 tablespoon chili powder
- 1/2 teaspoon oregano
- 1/4 teaspoon ground cumin
- 1 garlic clove, minced
- 8 flour tortillas
- 1/4 cup cheddar cheese, shredded
