Copycat Hardee’s Biscuits

Combine flour, sugar, milk and mayo into a smooth dough
- 2 cups self-rising flour
- 1 tablespoons sugar
- 1 cup milk
- 1/3 cup mayonnaise
Fish Tacos

Bean Salad: Combine all ingredients in a medium sized bowl
- Black Bean Salad:
- 1 # white fish fillets, cut in stripes
- 1 cup flour
- 2 egg
- 1/2 c. milk
- 2 c. panko bread crumbs
- salt & pepper
- Old Bay seasoning to taste
- Oil, for frying
- 8 tortillas corn or flour your choice
- 2 cups shredded cabbage
- Black bean salad
- 1 cup fish taco white sauce or sauce of choice
- 1 (15.5-oz) can, black beans, rinsed & drained
- 1 1/2 c. corn
- 1/2 red bell pepper, seeded & diced
- 1/2 c. red onion, finely diced
- 1 1/2 tsp ground cumin
- 1/3 – 1/2 c. cilantro leaves, finely chopped
- salt & pepper to taste
- White Sauce:
- 1/3 c. mayonnaise
- 1/3 c. plain yogurt
- 1 tsp fresh lime juice
- 1/2 to 1 tsp chipotle hot sauce
Zucchini with Herbs and Garlic

In a large skillet heat oil
- 2 tbs extra-virgin olive oil
- 3 medium zucchini, sliced 1/4-inch thick
- 2 scallions, chopped
- 1 tsp crushed garlic
- 2/3 c. chicken broth
- 2 tbs Garlic and Herb Sauce Mix (recommended: Knorr)
- 2 tbs finely chopped flat-leaf parsley
- Salt & pepper
Zucchini Corn Medley

In saucepan over medium heat, cook zucchini in salted water about 6 minutes
- 5 med zucchini, cut into 1/2 inch chunks
- 1/2 c. water
- 1/2 tsp salt
- 1 10oz pkg frozen corn
- 1 4oz can chopped gr. chilies
- 2 tbs butter
- 2 tbs flour
- 1.4 tsp dry mustard
- 1/4 tsp salt and pepper
- 1 c. milk
- 1/2 c. shredded cheddar cheese
Skinny Chicken & Broccoli Alfredo

A quick, easy and skinny weeknight meal with healthier ingredients
- 3 boneless, skinless chicken breasts, grilled and cut into chunks (about 2 cups)
- 2 cups roasted broccoli florets
- 8 ounces fettuccine
- 2 tablespoons extra virgin olive oil
- 2 teaspoons minced garlic
- 2 tablespoons flour
- 1 cup fat-free, low sodium chicken broth
- 1/4 cup plain FAGE Total 0% greek yogur
- 1/4 cup skim milk
- 1/4 teaspoon pepper
- 1 pinch ground nutmeg
- 3/4 cup freshly grated Parmesan cheese
Fruit Smoothies

Use your creativity!
- 1/2 frozen bananna
- 1 handful of blueberries, strawberries, pineapple, grapes or whatever fruit you may have
- 1/2 apple
- few walnuts or almonds (opt)
- 1 T. good oil
- 1/4 c. water or ice
Catfish and Black Bean Stew

Heat 2 tsp oil in large skillet over low heat
- 2 tbs olive oil
- 1 lg onion, chopped
- 1 sweet green pepper, choppped
- 2 cloves garlic, minced
- 1 can black beans, drained & rinsed
- 1/2 c. chopped tomato
- 1/2 c. clam juice
- 1/4 tsp oregano, crumbled
- 1 # catfish fillets (red snapper, sea bass)
- 1/8 tsp ground allspice
- 1/8 tsp ground cloves
- 1/8 tsp ground red pepper, opt
Creole Snapper

Sauté pepper and onions in butter, add tomatoes, tomato sauce, basil, salt, pepper and bay leaf
- 1 sliced gr pepper
- 1 1/2 c. sliced gr onions
- 2 tbs butter
- 1 14oz can diced tomatoes, drained
- 1 8oz can tomato sauce
- 1/2 tsp chopped basil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 bay leaf
- 1 lb red snapper fillets
Broccoli Cornbread Mini-Muffins Recipe

Combine first 4 ingredients in a large bowl; make a well in center of mixture
- 1 package corn muffin mix (8 1/2 oz size)
- 1 package frozen chopped broccoli (10 oz size) -- thawed
- 1 cup Cheddar cheese, shredded
- 1 small onion, chopped
- 2 large eggs
- 1/2 cup butter or margarine, melted
Portobello Mushroom Burgers

Place the mushroom caps, smooth side up, in a shallow dish
- 4 Portobello mushroom caps
- 1/4 c. balsamic vinegar
- 2 tbs olive oil
- 1 tsp dried basil
- 1 tsp oregano
- 1 tsp garlic powder
- Salt & pepper to taste
- 4 slices provolone or Swiss cheese
- Bun of choice
- Mayonnaise
- Sliced tomato
- Lettuce leaves
