  • 1 1/2 c. corn
  • 1/2 red bell pepper, seeded & diced
  • 1/2 c. red onion, finely diced
  • 1 1/2 tsp ground cumin
  • 1/3 – 1/2 c. cilantro leaves, finely chopped
  • salt & pepper to taste
  • White Sauce:
  • 1/3 c. mayonnaise
  • 1/3 c. plain yogurt
  • 1 tsp fresh lime juice
  • 1/2 to 1 tsp chipotle hot sauce
