Southwest Bean Veggie Rice Bowl

Cook rice according to package directions
- 1 c. brown rice
- 1 1/2 c. water
- 1 can pinto beans, drained
- 1 ear corn on cob
- 1 med zucchini
- 1 med yellow squash
- 1/2 med onion
- 1/2 green or red bell pepper
- 1 clove garlic
- 1/4 c. salsa
- 2 tbs ancho chili powder
- 2 tbs cumin
- 2 tsp salt
- 2 tbs olive
- 1/2 c. shredded cheddar
- 4 tbs light sour cream or yogurt
- 3 green onions, sliced
Oven Roasted Broccoli

Preheat oven to 425 degrees F
- 1 pound broccoli, rinsed and trimmed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup panko bread crumbs
- 1/4 cup finely grated Parmesan or sharp Cheddar

- Dijon vinaigrette:
- 1 tbs lemon juice
- 1 tbs Dijon mustard
- 1/3 c. oil
- Minced chives, fresh parsley, any herb you like
- Salad:
- 4 4oz skinless salmon fillets
- Salt, pepper and thyme
- 8 oz gr beans
- 12 oz red potatoes
- 2 tomatoes
- 3 hard-boiled eggs
- 1 red onion
- Black olives
- Mixed salad greens
Okra With Tomato Sauce

Heat 1 tablespoon olive oil in a saucepan over medium-high heat
- 1 pound fresh baby okra, washed, dried, stem ends trimmed very close to top, or use frozen thawed whole baby okra
- 2 tablespoons olive oil
- 1/4 cup finely chopped onion
- 1 clove garlic, finely minced
- 2 medium tomatoes, peeled, diced, or 1 can (14.5 ounces) diced tomatoes
- 1 tablespoon lemon juice
- dash salt and pepper
Roasted Spaghetti Squash with Mushrooms

Pre-heat oven to 400 degrees
- 1 spaghetti squash
- 3 tbs olive oil, divided
- 1 minced clove garlic
- 8 ounces sliced mushrooms
- 1/4 c. chopped fresh parsley
- 1/4 c. freshly grated Parmesan cheese
Chicken Pot Stickers

Chop the chicken into small pieces
- Reserved chicken, from Chicken Teriyaki recipe
- 3 scallions, reserved from Chicken Teriyaki recipe, 1 uncooked, 2 grilled
- 12 round wonton wrappers
- 1 tablespoon canola oil
- 2 tablespoons water
- 1/4 cup reduced sodium soy sauce
- 1 tablespoon cider vinegar
- 1 teaspoon sugar
English Pea Salad

Mix all ingredients together and cool in refrigerator for at least one hour
- 1 can peas
- 2 hard boiled eggs, peeled and chopped
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 2-3 dill pickle relish
- 1/2 cup cubed or grated cheddar
- 2 tbsp. mayonnaise

- 1 cup orange marmalade
- 1 1/2 cups assorted nuts, toasted and chopped (try hazelnuts, almonds, and walnuts)

- 1 small onion, chopped
- 1/2 cup slivered almonds, toasted
